In India, we love our chutneys and raitas, Pickles, and powders to go with most of our dishes as sides, for our roti’s and rice.  After coming here, I used to use them on bread with loads of variations.  My kids used to enjoy it with fresh veggies to go with them.  I was a happy mum.  Then I started exploring, experimenting, and making different chutneys, pâté, and dips with fresh and new ingredients and full of flavour.

We all live in a very hectic lifestyle. It’s full of work, family, and commitments and sometimes these quick to make pâté, chutneys and dips are very handy.  Early in the morning when you must fix your breakfast as quickly as possible then this pâté is perfect, It goes very well with your bread toast than with just butter or jam.  This is loads of healthy goodness in your bowl don’t you think so.  Spinach is rich in Iron with vitamins and minerals and of course with walnuts and sunflower seeds it’s a healthy treat.

You can also use this as one of your starters if you are having a 3-course meal, healthy and delicious. Send these in children's lunch boxes with veggie crudités and some home baked bread sticks. I had made a whole wheat crusty baguette, this is all you need to enjoy this pâté. Grate some cheese if you love cheese!  or you can also spread thinly on a banh-mi style sandwich.  I had made mushroom and garlic sauteed with some thyme to top it up! You have so many ways to eat it! It's your choice.

Veggie Spinach walnut spicy pâté

This spinach pâté is rich with all the goodness in a bowl, with a smooth texture and quite flavourful and enjoy this in a variety of ways
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 3 people

Ingredients

  • 450 grams Spinach leaves ( I used babay spinach)
  • 1/3 cup walnuts
  • 2 tbsp sunflower seeds
  • 3 garlic pods
  • 1/2 cup Chopped coriander leaves (loosely packed)
  • 2 tsp chillie flakes
  • 1 tsp coriander seeds
  • 4 tbsp olive oil
  • salt as required
  • 4 scallions

Instructions

  • Bring a bowl of water to a boil and blanch spinach leaves 2 minutes. Drain the water from the spinach and allow it to completely drain. Meanwhile, In a skillet take a tbsp of olive oil add chopped garlic, broken pieces of walnuts, sunflower seeds, coriander seeds and chilli flakes.
  • Remove it from the skillet and allow it to cool. Switch off the stove in the warmth of the skillet fry chopped scallion, blanched and chopped Spinach with chopped coriander leaves. Leave it in the skillet let it cool down.

  • In a food processor ( or mixie) grind the cool down sauteed ingredients first to a smooth powder, then to this add spinach, coriander and scallion into it process to a smooth paste with warm water, salt and left over olive oil to a smooth paste.
  • Take it in a bowl and sprinkle with some chilli flakes and serve it with crackers, crudites or Bread.

Notes

Taste, check and season it according to your liking and serve.

PURSLANE & KALE FATAYER
Purslane Fatayer
I came to find out that Fatayer (Lebanese savoury triangular pastries) is a Mediterranean street food, usually made with Purslane (Baqleh) and the one made with spinach called Fatayer bil-sabanegh and she says can be adapted to using any kind of greens we like.
I had started thinking what shall I bake, I had a busy day from past two days, came home late last night had a terrible headache and I was in no mood to bake anything, My baking or cooking always ends up with my kids coming back from school they come home look for something to eat, they love something like a snack, but I always prefer that they eat well, something healthy, always look for something good for them to gorge.
 
 H got me this plant and I have been trying to protect it now as it is so cold in my conservatory, It grew very well in summer with beautiful leaves but I never used it. I was scared that it might die, this plant is grown everywhere in India it is commonly known as Purslane or Verdolaga, in Tamil it is called Paruppu keerai, in Kannada Dudagorai.  Basically it is a weed grown everywhere in India, It is still used in various cooking ways in India.  I still keeping looking for it everywhere here if I could find a bunch of it, As I was googling through I found out that they are very rich in Omega 3 fatty acids, and they are also rich in vitamin C, they are even used in medicine for treating cancer etc.., etc.., Just Google around to see more information on this plant.
I wasn't sure if I could grow it here, for the weather conditions, it seems Googling I have found out that it will be dormant and grows back, I don't want to take any risk so I keep it in my conservatory, not that it is looking any healthy now, fingers crossed it won't die on me.
I was searching for something new I could cook up from this plant, I was surprised to see a few ways now I can use it not only in the India way of cooking, when searching I found this recipe on Anissa's blog, I was in awe with her photography and loved I could try out something new.
I so found out that middle eastern cookery enjoy this nutritious weed, here is how I made it, I have adapted the recipe very much but tweaked it a little bit, as I did not how much my kids would love it, when ever I prepare something new I use what my kids like and see how it goes and then revert back to the original recipe.., kind of making them comfort with their usual food. This is how I made it...
PURSLANE, KALE, SPINACH, WATER CRESS AND ROCKET  FATAYER
Serves : 4
makes : 12 (depending on the size)
INGREDIENTS:
FOR THE DOUGH
175 grms ( nearly 1 and 1/4 cup) of All purpose Flour
2 tbsp of Garlic Flavoured Extra virgin Olive oil
1/2 tsp salt
Nearly 3/4th cup of water

Purslane
FOR THE FILLING
1/2 Cup of Purslane
2 Cups of Kale
2 medium sized onions
1 Cup of Water Cress, Spinach and Rocket
1 tbsp of Sumac
1 tbsp of Sichuan Pepper
1 tbsp Olive oil
1 tsp salt
Cheese (optional)
 METHOD:
vegetariana pizza

In a bowl take all the Ingredients under For the dough mix them well first, resembles like a crumbled cheese make a well in the center and  start from 1/4 cup of water making it into a dough, keep adding water until a firm dough is formed. Knead this dough until it is smooth and elastic and leave it in a bowl covered with a wet cloth until you make your filling ready. In a bowl wash drain and and chop the Greens roughly, to this add chopped Onions and all the other Ingredients listed under the filling mix them well thoroughly and leave aside. Preheat the oven to 450 degrees ( I preheated and baked my pastries on Gas mark 6 as my oven gets too hot).

Take the dough make 12 round balls and one by one, flatten into a disc place some filling on each disc lift two sides 1/3rd of the circle and pinch them together and lift the third side and pinch them like a triangle seal all the three sides with a thin raised inverted Y in the middle.
Be sure to seal the pastry well so they don't open up during baking, transfer them on to a baking sheet and bake 15 to 20 minutes according to your oven's heat.
Bake them until they are golden in colour and serve them warm or cold.

VERDICT:
The pastry was really delicious, my children loved them, they even told me I shouldn't have added the cheese!, Next time I can just stick to the basic recipe without my little tweak of adding cheese in it thinking kids would like it.

Do not use any cheese in this recipe and you will have a wonderful Vegan Savoury pastry to enjoy.

Call them cutlets or Burgers, call it however you want but definitely a delicious healthy recipe.  If you like to eat in between Burger Buns with sauce, Mayonnaise and salad leaves they become Burgers OR If you don't want to eat it like that you can just eat with a ketchup or sauce they become cutlet, If you want to make it like restaurant, Hotel or take away style you can deep fry them.  I grilled them and put them on the stove top with a bit of oil to give that good perfect look.
My kids love these kind of Burger / cutlet I make, and usually make them in different ways, I have got a few in my draft, this was also in my draft :), when Moong dal and Pepper were the magic ingredients, I was shocked to find how many recipes I have in drafts, I should have started posting from the day she announced, but with my Neck stuck and I sitting here looking like a ostrich with my Neck collar it is so difficult to even sit and type or sit comfortably but then I thought I will pull myself and do this, as this is good chance to post some in my drafts than them still waiting for me to publish right ?.  Ok let me stop at this, and get back to the recipe.  Here is how it was made... Hope you like it

SPINACH AND MOONG DAL CUTLETS / BURGERS

INGREDIENTS:
1/2 Cup Moong Dal
1 Bunch Spinach
1 Large Onion
2 Medium sized Potatoes
1 Medium sized CarrotCup 
1/2 grated Cauliflower
1/2 tbsp Ginger- Garlic Paste
3 to 4 tbsp of Coriander chopped
1 tsp Chilli flakes
1 tsp Pepper powder
1/2 tsp Cumin powder
1 tsp Coriander powder
Salt as required
2 cup Bread Crumbs ( use as required )

HOME MADE BREAD CRUMBS FRESH
2 to 3 Brown / white bread slices
1/4 cup Walnuts
Grind both of these in a mixie / food processor fry it in a wok / pan for few minutes until it looses the moisture in it.

FOR THE COATING / COVER
1/4 cup Corn Flour and 1/4 cup All purpose Flour and water as required to make it into a sauce consistency
OR you can use Egg instead of this

METHOD:
Clean, Chop and cook spinach in a very minimum water say around 1/4 cup water or even less, I cooked it in my little cooker in a low flame, that way they don't get stuck to the cooker.  Puree the cooked spinach.
Next grate cauliflower and cook the same way, drain out the water and keep it separately.
Next grate carrots, onions and keep it aside.
Wash and soak Moong Dal from at least 2 hours, cook it until they become soft but doesn't loose too much of their shape then drain out the water.  ( The water can be reserved and can be used in making Rasam / sambhar )
Cook potatoes peel the skin and mash them up as well.
In a wok / pan add 2 tsp of oil add G-G paste chopped onions all the spices saute for just few minutes, then add all the other Ingredients mix them up well.
TASTE and adjust OR Adjust , salt and spices in it, as you like it, ( I usually make it less spicy because one kid doesn't like to eat anything spicy, the other two eat everything with Nando's Sauce which is very hot, so I try to adjust to see that they don't eat anything too hot and spicy).
Add bread Crumbs ( If you don't like too much bread crumbs the burger will only be a bit softer and doesn't hold shape if you are not careful, I always use less bread crumbs so I really struggle to make them hold well together but I like it that way ).
So, add bread crumbs and bring them together they will hold into shape then, make round balls of the size you prefer then flatten it a bit.
Dip these balls in the Sauce you have made ( or you can use Eggs to coat them ) then again Dip them in bread crumbs.  When all of them are ready coat them with a bit of oil on all sides and grill it for 15 to 20 minutes on Gas Mark 5, they will harden up a bit.
Now transfer them on to the girdle / flat pan / tawa on the stove top then with help of little oil toast them or shallow fry on  both the sides for few minutes until you see it is roasted well on both the sides.
Serve them immediately with some fresh salad leaves or with Burger buns and sauces or as you wish.

A few days back my kids were saying it's been a long time I made these kind of things and they love my Burgers and miss it..

WHAT IS QUICHE? 
Quiche is spelled as keesh, which is said originally derived from french meaning a ''Little cake''. but some say that it is something which the German chefs baked 'Kuchen'' meaning a little cake in a shell.
SO, WHAT EXACTLY IS QUICHE?
It is a French Tart consisting of Pastry Crust usually filled with savoury fillings! Like custard, cheese, meat, Seafood or Vegetables.  It is a French dish, but is said that eggs and cream in a pastry is an English Cuisine!
In French Quiche is named descriptively like for example :
Quiche au fromage ( quiche with cheese )
Quiche aux champignons ( quiche with mushrooms)
Quiche with florentine (Spinach) and Provencale (Tomatoes) 
When and How do you serve? 
Quiche is such a versatile recipe can be served anytime of the day,  Serve it hot or warm.  It is a party food, serve along with Roast potatoes and cooked green peas, roasted and sautéed with spices. I usually serve it as breakfast on weekends or when my kids come back from school like a snack!!, Quiche is something made with eggs, dairy and cream cheese combination to a custardy consistency baked in a shell.
Quiche was something I came to know only after coming to UK, I started baking quiches with eggs when I started to learn baking, as my kids and Husband loved it. After I started baking Eggless I started experimenting to substitute eggs in all the recipes I baked.  Savoury bakes are my family favourite and I love to substitute Eggs in every recipe I make. 
I have lot of drafts of savoury bakes. I will try to share them soon.  Don't I do this often saying I have drafts, but that is so true, you wouldn't believe, my mobile has 3586 photos of cooking !!!, can you believe, I just noticed it when my son showed me.., hahah I really was shocked, he was telling me, thank God!, you have good storage space in your phone, I have to do something about it soon.

Eggless Baking!
When Gayatri  asked us to bake quiches for Eggless Baking Group this month, I was into it completely because I keep baking quiches quite often as my family love it.   I have been trying new ways to substitute eggs to do quiches, tarts and pies which are our favourite savoury baking.  My family likes savoury bakes than sweet bakes, which you might have noticed in my blog.
Let us get to the recipe...
This recipe was adapted from Martha stewart using her pie - dough recipe.. here it is how I have changed the  original recipe.  I have substituted Eggs and whole meal flour and added extra veggies in it..
This will be a very long post bear with me....EGGLESS WHOLE MEAL SPINACH, MUSHROOM CHEDDAR QUICHE

BASIC PIE DOUGH
Adapted minimally from Martha stewart
Makes 9 inch crust

INGREDIENTS:
1  and 1/4 Cup Whole meal flour
1/2 tsp salt
1/2 tsp sugar
100 grms ( nearly 1/2 cup ) butter
6 tbsp ( nearly 1/2 cup around 100ml ) Cup cold water

METHOD:
Mix the flours, sugar and salt well together.
Chop the cold butter into pieces, mix them in a food processor, as I do not have one I used my spatula ( a hard one ) and mixed them as much as possible, you can even use your hands and flour resembles like crumbles to this dough start adding cold water I started of with 1/4 cup and then started adding tbsp of cold water until the flour became a dough!.  Do not handle the dough too much.
Place this dough in a plastic wrap and chill it again in your fridge for at least an hour, so the butter firms  up again. ( you can even keep it overnight )
After an hour or so, take it out, I used a cling film, I  first spread it on my table top then placed this firmed up dough  on top of it placed an other cling film covering it, so I won't be touching the dough, and rolled it thin as I needed an 9 inch crust, I had to take them out of the cling film as it was not big enough and rolled them again a bit more from the middle rolling it around for an even base.  Or you can lightly flour the surface and roll out the crust, as I did not want to add more flour I made it this way.

Butter the tart case thoroughly, Sprinkle some corn meal on the base. Lift the dough carefully and place it on the tart case and press them completely and trim of the edges if any.
Prick the base with a fork this makes the dough not puffing up then place a baking sheet and put some baking beans ( or Rice ) on top of them, then put it back into the fridge for an other half an hour to firm the butter again or until you make the filling.
Blind Bake this case in a oven at 190 degrees/ Gas Mark 6 for 20 minutes you can see the crust turning gold at the edges.
Remove it from the oven and place it on a wire rack,
I learnt a trick from a book that if you add hot oil ( olive or any oil ) on the base of the pie crust immediately after taking it out of the oven the  crust will not become soggy and firms up.., I can't remember which book, anyway I added 2 tbsp of hot oil on to the crust immediately after taking it out of the oven after removing the baking beans, then put it back again in the oven reducing the temperature to 180 degrees/ Gas mark 4 for a further 5 minutes ( you can even skip this and just add the filling and bake your quiche )

SPINACH AND MUSHROOM WITH CHEDDAR FILLING

INGREDIENTS:
250 grams Spinach
150 grms Mushrooms
2 Onions
2 garlic pods
1 tsp of Pepper powder
1/2 tbsp Italian dried herbs
1 and 1/2 tsp of Salt
1 Cup grated cheddar cheese
1/2 cup Creme fraiche
1 tbsp Chia seeds ( + 3 tbsp of Hot water )
1/2 Cup Milk
1 tbsp Arrow root powder

METHOD:
First step Soak Chia seeds in hot water for few minutes.

Next chop onions and  garlic.  Heat  2 tsp of oil add all the chopped ingredients and saute them.  Meanwhile wash and dry out the spinach with the help of a kitchen towel spreading the washed spinach on a towel, then chop them and chop Mushrooms too.., Once the onions become translucent add spinach and mushroom and saute them on a medium to high heat until they wilt away then sprinkle pepper powder, salt and Italian dried herbs mix well, and saute them. As veggies sometimes release water try to Sauté until it evaporates, actually it doesn't completely evaporate so not to bother.  Once done you can add 1/4 Cup bread crumbs, so it will absorb all the water. Take it out and allow it cool.

Meanwhile mix milk and arrow root powder and put it in a pan and cook it until it starts thickening, remove immediately when it is almost semi thick like a  sauce.
In a blender take  chia seeds, creme fraiche , and the above said sauce, blend them all well together, until it becomes like a thick creamy sauce.
Add this creamy sauce to the cooked spinach mix well, pour this onto the pre baked crust, add grated cheese on top of it and put it back in the oven and bake the quiche for a further 30 to 40 minutes until the quiche has a golden top.
Take out the quiche when done, leave it on a wire rack to cool down a bit then cut them out and serve them warm to enjoy with some salad leaves, Roast potatoes with ketchup or what ever you like.

Little Tips:
Take out the quiche when the middle is still soft this makes the quiche looks creamy custardy texture.

You must have noticed that my baking is always to please my kids.., My whole cooking and baking is involved with my kids..., they are my inspiration to create whatever I do.. , My eldest is my greatest inspiration as she loves to try out every dish possible (only vegetarian) .
My kids love these Tarts and pies and keep asking me to bake them. That was when I started these journey on Tarts and pies from plain tarts to different kinds of tarts  lot of experiments I have indulged myself in!!
I have baked these tarts many a times and Just because my kids and of course my hubby loves it too....., sometimes I bake them as brunch on weekends or sometimes as their snacking time, coming from school they are always very hungry....
Basically baking this kind of Tart started one day when there was an argument between my two girls, My eldest  doesn't like these french fries, chips etc.., she feels that they are very oily to her taste, even though they are baked ones, only when I make them she likes as she mum wouldn't use too much oil  but she loves eating cheeses though!.
My second one loves potatoes to the core, she has already told me, that on her birthday and of course her twin R's D-Day I have to make, cook and bake only potatoes her list was too long, I just had to ignore her.
so coming back to the recipe she wanted potatoes in her tart and the eldest said I should not use it with other veggies in the tart.
When I saw both them together, an idea came to my mind!, why not use them both in flours satisfy and both the girls. so here goes my recipe...

WHOLE WHEAT AND POTATO VEGGIES TART
FOR THE TART: 
INGREDIENTS:
1 cup whole wheat flour (atta)
1/4 cup plain flour
3/4 th cup  peeled, cooked and Mashed potato
salt to taste
6 tbsp of Chilled butter
1/4 cup cold water ( use when needed)
Cheese for the topping of the tart


FILLING FOR THE TART
INGREDIENTS:
1 Green bell pepper
1 yellow pepper
100 gms of Broccoli florets
100 gms of Cauliflower florets
1 cup chopped spinach
1/2 cup peas
1 Onion
1 Carrot
1 tsp salt
100 ml single cream
1 tbsp Flax seed meal
1 cup of vegetable stock ( I used 1 ready made cube, gently warm water and add the stock cube).
50 ml single cream
1 tbsp Corn starch




METHOD AND SAUCE FOR THE TART
You can use an Egg in the sauce recipe but I have baked an eggless version...
First of all sift both the flours, with salt.
Cut all your veggies, cook broccoli, cauliflower, peas and carrot set them aside, don't cook too much.
Beauty of the veggies might become too soft and become a mess
Mash the cooked potato blend it with butter, once those two are ready, start adding the flour, to make it into a dough consistency. Rub the flour with your finger tips, just add 1 or 2 tbsp of cold water make it into a nice dough, knead it well so it forms into a ball.
wrap this dough in a plastic wrap and chill that in the refrigerator for at least 30 minutes
Meanwhile soak in a 3 tbsp of hot water flax seed meal.( around 10 minutes)
preheat the oven to 200 degree centigrade/Gas mark 6)
In a large wok, add 2 to 3 tbsp of Ginger-Garlic paste, once sauted add chopped onions, and pepper finely sliced and saute them too..,
Now add pre-boiled  broccoli, cauliflower, carrot etc.., into the wok then add the vegetable stock and allow it to boil with Pepper powder.
Now blend these flax seed meal first and then add corn starch without any lumps and single cream blend well together again, keep the flame low, pour this into the cooking veggies, adjust salt  and allow it boil for few minutes stirring continuously once it starts thickening keep it aside to cool.
Take out the dough roll out into a nice big round, then press this pasty ball into the tin, allowing any excess to hang over the side, you can roll a rolling pin over the tin and cut the excess slices for a good looking pasty case or like me just leave it aside.

Prick the base with a fork,  reduce the heat to moderate 180degree C, (Gas Mark 4) and all the fillings on to it then  grate some Cheddar cheese top it over close all the hanging out extra bits of the pastry  to cover it up and bake for 35 to 40 minutes until cheese melts and turn light golden in colour.
Serve warm and let the kids enjoy.

MY TIPS: To get a more crispier base you can trim of the extra dough, cover the pastry case with baking paper then add baking beads place the tin on a baking tray and bake for 15 to 20 minutes. Remove the paper and beads reduce the heat add the fillings and cheese bake further 25 to 30 minutes or until golden.

Hi hoping to post two more recipes, so I could participate in the events, let me start with this post let me quick and go right into the post :)).
I had some Spinach, Methi (Fenugreek) Leaves in my fridge, as I could not use just one and make a gravy I decided to use both of them, then I started making some little changes to my gravy  from just greens.
So here how it goes..............

METHI, SPINACH AND PANEER GRAVY

INGREDIENTS:
1 Bunch Fenugreek (Methi) Leaves
300 gms Spinach
200 gms Paneer cubes (shop bought)
1 Large Onion
1 tsp Garam Masala powder
5 to 6 stalks of Coriander leaves
6 tbsp of Oil
Salt as required
FOR THE GRAVY
8 Medium Sized Tomatoes
2 Garlic pods
1'' Ginger
1/2 tbsp Red chilli powder
1 tsp Coriander powder
1/2 tsp Cumin powder
1/4 tsp Turmeric powder
1/2 tsp Amla Powder
MARINATING PANEER CUBES
1/4 tsp Turmeric powder
1/2 tsp Chilli powder
1/4 tsp Salt
METHOD:
On the stove top as you can see in the picture, Roast the Tomatoes, peel off the skin, puree them with garlic pods and keep it aside.
Meanwhile when the tomatoes are roasting on the stove top, Cut the paneer into cubes and marinate them with the above said Ingredients.
Do not chop the Fenugreek leaves, not until the time you use. Just wash and pluck the leaves with thin tender stems, do not use the thick stalks as they don't cook very well, and might get stuck when eating. I used ready to use Packed Spinach from the supermarket, I just decided I will chop both of them when I use them.
Take a Large wok, heat 3 tbsp of Oil, add chopped onions, grated ginger and fry until it becomes soft and transparent, Meanwhile simultaneously when it is cooking, chop the Greens otherwise, if it is not possible, just lower the flame of the frying onions and then chop the greens.
Add these chopped greens to the wok and fry them till they become soft.
Meanwhile in an other wok add an other 3 tbsp of oil, when it is hot add the pureed Tomato paste and fry until oil separates out then add all the masala powders under the gravy heading and fry for few more minutes, it might become kind of dry when you add the masalas not to worry, just sprinkle a little bit of water, If you don't mind oil you can add another 2 tbsp of oil, then add the Marinated paneer and fry very carefully so they don't break apart. so, the paneer is well coated with Tomato paste and paneer absorbs the masala in it.
Add this Paneer gravy to the cooking Greens mix well until well combined, then add the Garam Masala powder and chopped fresh coriander leaves mix well, close the lid for an other 5 minutes in a medium flame, Now the Spinach, Methi and paneer gravy is ready to go with pulkas, chapatis or Nans.
REMEMBER : Add the masala powders to your tastes as everybody's taste differs, I might not make it too spicy and my chilli powder might be different than yours :))
Cut a slice of Lime/Lemon and squeeze it before you serve or just leave it on the plate with few chopped Onions to go with it. Yum yum...

Every week when it is Tuesday I keep thinking I will definitely start posting my Tried and tasted recipes/Bookmarked recipes, but it seems to never happen at all, I saw this Tuesday BM - Event in Priya's blog and Aipi's combined event, I thought that's fantastic, I shall start posting  one by one everyweek, so I can delete my Book Marks, no wonder I have so many of them and so many I have tried and seem to never post them. Today I decided I am going to do it!, Good girl aint't I am :), Here I am with my Book Marked Recipe.
This Girl is not only sweet and I have a special feeling with both of the SIL's, ( hey not related to me), to each other, One showcases wonderful recipes with beautiful Photographs  and the other showcases her blog with beautiful Authentic recipes, I love her blog, I know she would think I don't visit her often but I do :).
She has a beautiful, useful, medicinal right - up for every post she does, Of course you all guessed yes, that is Chitra of Ratouille - Any one can cook, I made some of her signature dishes from her authentic kitchen we all loved  and enjoyed it, and I would love to tell her so...
You must be wondering what did I try her Sambhar Powder which is on the main page of her blog! Get the Sambhar powder Recipe from here.

SPINACH SAMBHAR WITH SWEET CABBAGE STIR-FRY

INGREDIENTS:
2 Bunches of Spinach
3/4th Cup of Tuvar Dal
1 Tomato
5-10 Small Onions/Shallots
Tamarind Gooseberry size
Salt as required
A Pinch of Asafoetida
Few curry leaves

Grind together:
3 to 4 tbsp of Sambhar Powder
1 tbsp of Rasam powder
3 tbsp of Coconut
cooked Tomato

Seasoning:
2 tsp of Oil
1 tsp of Mustard seeds

METHOD:
Wash and cook finely chopped Spinach, Tomato (chopped into two halves)  and Toor Dal together with a pinch of Turmeric powder in a pressure cooker up to 3 whistles.
Meanwhile chop the small onions finely and keep aside until needed.
Meanwhile when it is cooking, soak Tamarind in 1/2 cup of water and microwave for 1 minute, do not try to squeeze tamarind extract immediately you can add another 1/4 cup of water and squeeze the tamarind juice, if you can handle the hot water or leave it a few minutes, until you are comfortable with the water and squeeze the juice out of it.
Take a broad vessel heat a cup of water, Once it starts boiling, add the tamarind extract allow it boil for few more minutes (10-12 minutes) until the raw smell disappears in a medium flame, be careful otherwise it darkens the vessel ! around the sides. keep an eye on it.
By that time if the cooker has cooled down,  remove the tomato and keep it aside but for the spinach-Toordal mixture , with a masher give a light mash, so both of them combine together very well then add this to the cooking vessel, Immerse a ladle in it, so when it is boiling it won't spill out, still keep it a very medium flame and keep stirring now and then so it wont' get stuck to the bottom, because it might start to thicken.
Now Grind everything under the Grind together heading, with the cooked Tomato into a smooth paste with the help of 1/2 cup of water dissolve it well and add it to the cooking greens, mix well and let it boil, add required quantity of salt and asafoetida.
Now take a wok heat oil, add mustard seeds once they crackle up add the chopped onions and curry leaves and fry for few minutes until they are transparent add this to the cooking greens and dal mix well, and Now your sambhar is ready to be served with papad or dry curry of your choice.
I served it with Sweet cabbage dry curry.... recipe follows....

SWEET - CABBAGE STIR FRY:
INGREDIENTS:
1 Whole sweet cabbage
curry leaves a few
salt as required
few fresh Coriander leaves
A pinch of Asafoetida
1/4 cup Grated fresh Coconut

For Tempering:
1 tbsp Channa dal
1 tbsp Urad dal
1 tsp Mustard seeds
4 to 5 Dry Red chillies
1 tbsp of oil

METHOD:
Take a bowl with water, chop the cabbage finely and put it into the water, give one wash and drain all the water and keep aside.
In a wok heat oil, add mustard seeds once they crackle add everything under Tempering and saute for a minute the colour of the dals change, or you smell a nice aroma, Now add the chopped cabbage and curry leaves and mix well.
In a low flame cook the cabbage without any water, if you find it too dry sprinkle just a fistful of water.
I usually keep them immersed in water, until I need them. Once the seasoning is done, I dip my palm take a fistful of the cabbage try to drain by giving it a little shake and then add it directly to the wok or you can do as I said earlier.
Keep it covered and just few minutes once stir them all once and leave it again within 15- 20 minutes it gets cooked and just keep an eye that they don't get stuck to the wok, as we all know that cabbage gives water on its own, it is better not to add too much water.
Add salt mix well leave it for few more minutes
Then add freshly grated coconut mix well and serve.
This even goes well with Rasam, Chapatis etc..,,

Usha is a wonderful blogger with a lot of healthy recipes, I really wanted to try out her Barley recipes, I have tried some of her dishes and enjoyed it too.., I had posted one already, sometimes my photos are so ugly I don't like to post them, well I couldn't miss out on this as I follow her blog ardently and she is such a sweet person who never forgets to write to me and comment in my blog!, even though I don't comment in hers :).
I am always short of time, but I love to try out different recipes from different bloggers, My new way of book marking is now, writing down in a book all the recipes I love to try out.  These days with kids hols computer is become a gadget which I see seldom!, When I keep asking for it and they being glued to it and lost in their own world never here a thing I say, I give up.
Coming back to the recipe, from few days I am enjoying a lot of Green leaves from my garden and from the shop which I bought in loads, I have yet to post some of the recipes I have tried out, Spinach was in abundant as my friend got me some from London.  I was looking for something which I have never tried out, as I wanted to participate in T & T I first visited VegInspiration, so here is my Inspired recipe.....

PULI ITTA KEERAI / TAMARIND FLAVOURED SPINACH

INGREDIENTS:
2 Bunch of Spinach
Salt as required
2 flakes of Tamarind
1/2 cup water
2 Green chillies

SEASONING:
1 Tsp of oil
1/2 tsp of Mustard seeds
1 tsp of channa dal
1 tsp of Urad dal
1 or 2 Dry Red Chillies
A pinch of Asafoetida

METHOD:
Take a heavy bottomed vessel and cup spinach, Tamarind and Green chillies in 1/2 cup water until well done, put off the stove and allow it to cool, Once it is cooled puree them all together into a nice paste.
Take a wok and heat oil then add one by one everything under seasoning, fry them until a nice aroma comes out, add this to pureed spinach mix well and serve.

Usha suggests this goes well with Poricha Kozhumbu, I served it with Poricha Rasam, as she says it goes well with it because we do not use Tamarind to this rasam and it is a great combination.
Adjust the spices as per your taste, and it is quite a yummy dish, I ate this next day with Chapatis and it was really good., Thanks for the recipe Usha.

This is an other recipe which I had tried out from Usha's blog some time back... try this out too and enjoy as I did..

AVOCADO PULKAS

This was the softest Pulkas I ever made, I really enjoyed, I just tweaked it a little bit, she used spinach and Avocado both but I used only Avocado with this check out this link to get the recipe.
Stir-fried Vegetables with Avocado Pulkas

This is an other one which I tried, as my hubby loves More kozhambu, I really wanted to try this out, and I had book marked, I have used yoghurt and Tomatoes in my pacchadis. So, I made her version of Mor Kozhumbu with Tomatoes it was quite nice, Here is my post for that recipe......

MOR KOZHAMBU WITH TOMATO / BUTTERMILK WITH TOMATO

INGREDIENTS:
2 Tomatoes
2 Sprigs of Coriander leaves
2 Green Chillies
A pinch of Asafoetida
1 tsp of Cumin seeds
4 tbsp of  Coconut
1/4 tsp of Turmeric
4 to 5 Cups of Yoghurt
salt to taste
SEASONING:
1 tsp of coconut oil
1/2 tsp of mustard seeds
1/2 tsp of Fenugreek seeds
1 sprig curry leaves
2 sprigs of coriander leaves
METHOD:
Cook Tomatoes, turmeric until soft and mushy. Once it is well cooked, keep it aside until it is cool.  Then grind these cooked Tomatoes, turmeric, green chillies, coriander leaves, cumin seeds, coconut into a fine paste using 1 cup of  water.  Then heat this mixture for few more minutes and starts thickening.
Then add thick Yoghurt mix well and put it back on the stove, lower the heat and allow it cook, add required quantity of salt, mix well, Keep stirring for few more minutes, you can see the bubbles forming around the corner of the vessel, then put off the stove.
Take a wok, heat oil and add everything under seasoning once the mustard splutters, fenugreek seeds change colour, add curry leaves, asafoetida and then chopped coriander leaves.
Mix well and serve it with hot rice with some nice Dry curry, I served it with Aloo curry as always.
We all enjoyed it, you try and enjoy this as we did

This dish I am posting is my husband's specialty  He loves cooking ,trying new dishes & new vegetables, Because of him I think, I have tried different kind of vegetables after coming here, , he will eat whatever I cook!!!!, isn't that great!!, Here is the method he cooks this recipe with all the different kind of greens I bring home, My children love his Keerai Masial, Here is the recipe,
He started cooking with Dill (Sabasige soppu) leaves, then he used it with spinach, sometimes when I get Kale or some green leaves I get in the supermarket, or with Rocket-spinach-Watercress combo!!!, But on Monday he cooked it with Spinach-Dill combo.....

SPINACH-DILL COMBO KEERAI MASIAL :

Here are the ingredients for the macial :

Ingredients:

  • 2 bunch of Dill leaves
  • 300 gms or 2 bunch of Spinach leaves
  • 2 fist ful of Moong dal
  • 2 heaped tbsp of Jeera
  • 4 tbsp of coconut gratings or desiccated coconut
  • 12 cashewnuts
  • 6 Almonds
  • 2 to 3 Red chillies
  • A bit of asafoetida
  • Salt as required.
METHOD
  1. Wash both the greens drain out the water and cut them into pieces
  2. Wash the dal, Take a vessel pour water and a tsp of turmeric powder and asafoetida, add the washed dal and pour 2 to 2 and 1/2 glasses of water
  3. Add the greens in them and pressure cook them for 2 whistles.
  4. Meanwhile, Grind all the above said ingredients raw,
  5. Once the cooker is cooled mash the cooked dal and greens with a masher then add this ground paste into it and mix well,
  6. Add salt as required and cook on a medium flame for a few minutes until they cook well together.
  7. Season them with a tsp of oil, mustard seeds and a sprig of curry leaves.
  8. Serve it with hot Rice and with a Upperi/Balaka/dried soured green chillies fried in oil.
If you are in India, God! you can get soooo many kinds of keerai, I think its God's own loved land for different variety of vegetables.
Basically KEERAI MASIAL as I learnt it from my Mom-in-law is very simple and  easy to make dish, Ingredients are the same but you can use Thuvar dal also instead of Moong dal, you just have to use any keerai you want, cook them in the same way as above said and mash them , Then take a pan season it with a tsp of mustard seeds, 1 tbsp of Urad dal, 1 tbsp of Chenna dal, 2 to 3 broken Red chillies and a sprig of curry leaves, after tempering just mix with it and cook for a few more minutes, That's it job done and tasty to eat, sometimes she used to cut one tomato with it while cooking with the dal!!.
It was a quick recipe used to go very well with Venthya Kuzhambu or Menthi Kuzhambu
NOTE: If you want you can omit cashew and almonds in the recipe and cook with other ingredients then also it will taste very well.
