Of course it is not St.Patrick's day does it mean we should not make these cookies and eat it..,Well for something Green for St.Patrick's day she had made these, as she says you need not be an Irish to celebrate this day nor there is any excuse to celebrate festival days right ?. When I went searching in her blog for recipes, My eyes caught these cookies, I got hooked to these cookies as they had minty flavour and which I had never tried this before, I was a bit scared how my kids would like it, but they really liked it :)), I was a happy mother.  As you can see I did not use too much green colour in it. so you would definitely see the difference in our cookies..
Oh! I never told you why I posting this recipe, and about what I am talking about, This is our Secret Recipe Club Assignment, next is to whose blog I was assigned to right ?, Suzanne my hostess had assigned me to Adventures in all things food by Andrea, she is into so many things not only cooking, baking, Farming, products and Giveaways and crafting. Do check out her blog you will definitely try it out...
I have halved the recipe.
Here is the Recipe...

EGGLESS MINT FLAVOURED COOKIES - MARY LEPRACHAUN COOKIES
Recipe Source: Adventures in all things
Time  Required: 45 minutes
Made 15 cookies


INGREDIENTS:
1 and 1/4 cup All purpose Flour
1/4 tsp Baking soda
1/4 tsp salt
75 grms butter*
1/2 Cup Cane Sugar**
1/2 tsp Vanilla extract
1 tsp Mint extract
1 tbsp Corn Flour
4 drops Green food colouring
1/4 cup Choco chips (dark Chocolate)

METHOD:
Preheat the oven to 350 degree ***
Take all the dry Ingredients together and mix well except for sugar.
cream Butter and sugar together, add food colouring, extract, then add the dry Ingredients into it mix well with choco chips, Refrigerate the dough in the fridge for 30 minutes, Make small balls flatten it a little bit and place them on a parchment paper and bake them for 20 minutes.
Remove them on to a cooling rack for 10 minutes and enjoy it..

NOTES:
I halved the recipe so I could just substitute for 1 Egg
*I have reduced the butter she uses 1 stick butter (around 125 grms)
**Increased sugar by 1/4 cup, I have used Demarara Natural Cane sugar
***I baked them in my oven at Gas Mark 3 as my oven has a very high temperature.

Days are becoming gloomier and the rain making the days much lengthier telling us winter has stepped in :(, The other day we had this heavy rain fall poured suddenly when we were Windsor Castle, with loads of Hail stones, giving us shivers around shoulders and  palms, Weather turned so cold, I cursed myself not taking gloves and rain coat nor an Umbrella. I usually never go out without my umbrella. In UK it is one of the most important thing we need to carry as we never know what the next few hours of weather we would be having :)), some of my plants have found their way into my conservatory, we had a horrible frost as well, worried they might kill my plants. what have you done ? Do you have some precious plants you don't want them to die, what plans do you have to protect them.
Oh! wondering why I am here today, as I am not blogging regularly these days as I already told I have been really busy as my Mom is visiting me, and blogging is lagging the attention it needs.
An other month and An other SRC already. this month Suzanne my hostess assigned me to Le Ann's blog who blogs at Highlands Ranch Foodie.  Ranches, Cow Boys, Texas, Cattle Ranching was all those things I used to read when I was a young girl in books and wondered Wow what a life.  Reading Le Ann's blog I found that she lives in a place which used to be a place where they had cattle Ranches and she talks about it in her space. She says that she loves preparing authentic Mexican food and recipes that reflect the flavours of the west.
I was looking for something to bake, and this recipe caught my eye I have also book marked an other two recipe, I loved this one as it was Healthier and made with Linseed/Flaxseed, my daughter loves eating cheese and this would be a perfect one for her munching tidbits.  I just made little changes to the Original recipe.

FLAX SEED, CRUSHED PEPPER AND SUNFLOWER SEED CRACKERS
Adapted from : Highlands Ranch Foodie 
Preparation : 15 minutes
Baking time : 20 minutes
Yields : 9 Crackers

INGREDIENTS:
3/4th Cup Whole wheat Atta
1/4 cup Oats powdered
2 tbsp Butter
1 tsp crushed pepper
1 tsp salt
2 tbsp ground Flax seed meal
2 tbsp whole Linseed / flaxseed
1/8th tsp baking soda
2 tbsp thick yogurt/curds
2 tbsp water

METHOD:
In a large bowl take all the Ingredients except water and mix them well enough until they are well blended, to this add water as needed and make it into a nice firm dough.
In a baking sheet spread the dough in a rectangular shape, top sunflower seeds on then then as a topping, using Roller pin roll them once again with the toppings.
Cut them into 9 equal pieces with the help of a pizza cutter, keeping them apart, separate them out and bake them for about 20 minutes in a preheated oven  just 10 minutes before.
Remove them on to a cooling rack, they just slide off easily and here you are with your crackers.
Enjoy topping it with some cheese and some salsa.

Make it Vegan : By substituting butter with oil and yogurt with just water :))

It's been a long time I touched my laptop, but today is a special day which I would never wanted to miss out, Long back one of my dear Friend who was a blogger passed away suddenly, who always visited me and used to personally mail me whom I can never meet now, has and will always stay in my heart forever and I was not able to make it for the tribute day and missed it.  I have never forgiven myself for that, So, today I never wanted to miss this out.

As you all know that I am member of a blogging group called The Secret Recipe Club, this is a vast club where we make recipes from each other's blog in secret, I always enjoy so much this lovely little family, A few days back I received a mail from our Admin - April, that one of our blogger friends from our Group passed away, and it was none other than Daniel and it was such a great shock. April announced that the only way as food bloggers we could show our tribute to Daniel by doing this special revel to him and his family. Do check out all the recipes from our dear Daniel's blog in his memory from the following links below.

I haven't known Daniel Saraga personally, he blogs at The Haggis and The Herring and his dear Wife Meridith also blogs.  Daniel never forgot to visit my blog and leave his comment.  Past 2 months have been very busy and I have never visited any blogs as my Mum is here visiting me, and now how I wish I should have visited and left my comments. But alas, somethings you can never undo  right ?, and I regret them very badly.
As it was going on in my head that I do have to make it to the tribute, yesterday night I sat and started going through his recipe collection, I was amazed with his collection, he is such a versatile blogger, I think he  makes recipes from every nook and corner of the world.  An other thing I noticed in his blog was the love he had to his family and friends and especially his child - Oh! my I feel terrible to write about the loss both his kids will go through, and the hollow in their heart when they grow up to find the writings in his blog about them and his dear wife.  My heart and the tears goes to her I have no words to describe it in just a simple sorry for your loss, My thoughts and prayers will always be with you and your family Meredith, Let the Lord be with you in every step you take in your future and not just walk with you but carry you and Bless and take care of you and the two J's and the little J3 in your tummy always.
This is my little tribute to our Dear Blogger Daniel, Food bloggers  - we are a big Family, we love each other and enjoy each others recipes and have learnt a lot from each others culture, tradition and cuisines, You are one such person I have enjoyed going through your blog. I have bookmarked a few with time constraint and to please my kids appetite when they are back from college I made this wonderful, quick and yummy Pizza.

CHICKPEA FLOUR PIZZA IN CAST IRON
Recipe source : The Haggis and the Herring



Makes 3 pizzas
serves 3 teenage kids 🙂
2 Cups Bengal gram Flour / Chick pea flour
2 Cups water (extra if needed**)
2 tbsp Olive oil
1 tsp Salt
1 tbsp Italian Herbs
Green Pesto
1/4 tsp powdered pepper
2 small Onions minced
1 Large Tomato
1 Green Pepper / Capsicum Chopped
1 Red pepper / Capsicum chopped
2 tbsp of Jalapenos minced
1/2 cup Mozzarella grated cheese (or as much as you like)

METHOD:
Take Chick Pea Flour, Oil, salt, pepper powder and Italian Herbs, mix them all well together then start adding water, ** I have used this mark to indicate that use water accordingly to the flour you are using, Besan / Chick pea flour you get might be different from the one I might be using.
Make this batter like Idli batter or should I say Pancake batter but a bit thicker. Leave this batter for 30 minutes.
Chop all the vegetables and you can add any other vegetables you like too.. :)), Chop the tomatoes in quarter and remove the middle part / pith of the Tomatoes and chop only the outer part of it.
Heat a skillet / cast Iron pan, I used my crepe pan and as it is a non stick one, apply a tsp of olive oil pour a ladle full of the batter and spread it around.
Close a lid for just 2 to 3 minutes then spread Pesto on to the base top it with peppers, onions, Jalapenos and Tomatoes.

Top it with Mozzarella, close the lid for an other 2 to 3 minutes where in you can see the cheese melting.
Remove it on to a baking sheet and Bake it for an other 5 minutes when it starts turning golden in colour, remove it on to a plate and serve with with Tomato Ketchup.
Daniel, thank you for this lovely recipe, never ever thought I would making it and posting it this way, I would have loved it if I was assigned your blog from our club it would have been much more wonderful to post this recipe.

Hi everybody, Hope you are all doing well, I know I have disappeared from few days, it's a long gap between my posts, well, I have been so busy as Mom is here :))., Oh! I know its so wonderful to be with her here and enjoying her cooking completely. My kids have declared that their Mom is a super cook but their Paati ( Grandmother/Nan) is the world's best cook.  I will have to write about it more in my authentic recipes, which I am planning to post soon enough.  The reason for this little intro for my absence was because I took Mom few places here and still I need to show her some more, fingers crossed hope I will be able to cover as much as possible and I really don't want to miss this opportunity as she won't be coming back here again :(.
Today, I had to come to post this as you all know today is SRC Reveal Day. I thought of writing to my Hostess I might not be able to do it, but I just couldn't do it and really don't want to miss it, for two reasons going through Heather's blog when ever I had time, as her blog was in my phone permanently which I always do when I am assigned a blog!! and  I really wanted to bake and of course team spirit for SRC.
I feel  guilty and I never want to miss out, as this is such a big team and the stress and strain to manage this large group is not a easy joke. Hats of to the SRC team for that and thank them that I always come back to blogging just to post from SRC even sometimes I don't want to!!.

Suzanne my hostess had assigned me Heather's blog. She blogs at Fit Mama Real Food. A wonderful blogger with versatile things she blogs about. I had bookmarked a few like the Moist Banana bread, Zucchini Bread, Energy Balls, Nutella Balls and this Lemon and poppy seed bread. I have been going through her blog quite a few times when ever I got time to browse.  She is a fitness freak!!, Mom to a cutest kid, a good cook and loves to bake and cook good food no processed food and loves to eat what nature provides which turn into meals to please the little crowd!!, DIY and Organizer too.., and of course she is a food blogger, click on to her website you will know what I am talking about, I enjoyed going through her blog and do you want to know why I settled on to this recipe.., Just because of those words she wrote in this post made me feel that is what I always keep thinking when I get free time..
As Heather says:
Baking is total relaxation time for me.  When I need to get my mind off things, I head to the kitchen. When I’m bored I will bake.  If I want to procrastinate, I will bake.
I love to bake particularly Breads.., that's my favourite.
Coming to this recipe I had no poppy seed in hand and just got carried away with the recipe., I loved the texture of her bread as she has used Eggs (2) if you plan to make this Bread check out the original recipe. You will know what I mean. Looks really Gorgeous.  I had some Tutti fruity at home as I had baked a Bread out of it for them to take to school, the Left over filling I used it in this bread.  The bread isn't too sweet, it has the Lemony taste to it.

EGGLESS WHOLE WHEAT AND OAT MEAL LEMON, POPPY SEED, COCONUT AND FRUIT  BREAD
Adapted from Fit Mama Real Food with minimal changes

INGREDIENTS:
1 Cup ( 145 grms) Whole Wheat Flour
1 Cup (95 grms) Oat Meal Flour
100 grms Dried Fruits ( Dessicated sweet Coconut, Mango, Pineapple, Raisins, Cashews, Almonds )
3/4th Cup Natural Cane Sugar
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1/4 Cup Butter
1 Cup Yogurt
1 tbsp Vanilla Essence
Zest for 1 Lemon
3 Tbsp Lemon Juice
1 tbsp white Poppy seeds ( Indian variety)

METHOD:
Preheat Oven to Gas Mark 1
In 2 tbsp of hot water soak Poppy seeds until you prepare the rest of the ingredients.
Take both the Flours and sieve together and keep aside.
In a Large bowl take the Lemon zest, Yogurt, Lemon Juice and sugar and mix them well together.
Grind poppy seeds with water into a paste ( It won't become too smooth ), add this to the above mixture to this add Baking powder, Baking soda you will start seeing bubbles forming.
Add melted butter to it and mix well.
Add Dried fruits to it.
Add the prepared flour little by little and mix well together don't over mix it.
Pour this on to the prepared Loaf tin and Bake at Gas Mark 3 for about 45 minutes and bake for an other 5 more minutes reducing the temperature to Gas Mark 2.
Totally bake it around 50 minutes I changed temperatures because of my oven.
Insert a toothpick to find out if it comes out clean then it is baked.

Take it out and cool it on a wiring rack leave it for a few minutes then slice it and Enjoy..,
This is perfect Tea Bread can also be enjoyed as a Breakfast bread.

I know you must be wondering two posts in a day, I am not surprised, because last post was completely ready to post on the festival day, but missed posting it and it just carried on.. :), so decided to post it today morning, and this post is definitely will be posted today, as you all know today is SRC time :). The Secret Recipe Club is my Favourite time...

Every month I usually forget the dates and days for the posting of the events I participate, but with SRC I usually never forget the date, but most of the time I take a last minute decision to make the recipe, as I keep going through the blog whole month wondering what shall I make, but keep going through the blog, I think I usually get stuck to the recipe on the first round I look at a recipe and end up making it.
This month suzanne, My host has assigned me to Belcher town bites, of German mama, This is a blog from A to Z means Arepas to zwetschgen, totally wondering now right ?, I think she has baked and cooked from A to Z from every place on the Globe. If you want to find a recipe from some country just look into her blog you will find it, I couldn't really go through the whole blog, too many recipes to choose from, I first thought making some salad she has some 35 different salads!!, then wanted to try Turkish bread, but when I was googling, I was wondering about the toppings and the way it is made so the next one I kept going to was these Canadian Oatmeal rolls, the Maple syrup and oat meal attracted me to that recipe. She has wonderful blog with some amazing names and different recipes from nook and corner of the world.
Let's get back to the recipe then, I was browsing through google and was wondering what was so different about the oatmeal rolls, I have always baked oatmeal in my recipes but this was a little different.  I found out that they have used Eggs in one website, I found this recipe made with molasses I adapted some things from this recipe but left out molasses. I wanted to stick to the basic recipe from her blog but made with minor changes from her blog and made these rolls, they were delicious and turned out very well.
I really don't know how exactly the rolls are made, I wouldn't say that this is the authentic recipe, if any of you know the exact recipe do pass it on to me..
Here is how I made them...

NOVA SCOTIA CANADIAN OATMEAL ROLLS
Recipe adapted from Belcher town bites with minimal changes
Cuisine: Canada
Preparation: 20 minutes
Total time Pre-Baking: 5 hours
Baking time : 20 -25 minutes

INGREDIENTS:
1/4 Cup / 60 ml Milk
1 Cup / 100 gms Old fashioned Oats
1 Cup boiling water
1/4 cup / 60ml Maple syrup
2 tbsp oil
1 and 1/2 tsp salt
1 and 3/4th tsp Active dried yeast*
325 gms whole wheat Bread flour
1/4 Cup/  Wheat Germ (optional)**
50 gms/ 1/4 cup Cranberries
1/4 cup Orange Juice

* I had my last bit of yeast 1 and 3/4th tsp so I just used what I had so I had to change the recipe accordingly.
** I saw this added in one of the recipe links I found so just adapted it to make it healthier, so it is totally optional, you can substitute whole wheat flour or All purpose flour of 350 grms.

METHOD:
In a little bowl take cranberries, soak them in orange juice.
In a bowl take old fashioned oats, salt and  Maple syrup.
Pour boiling water over this oats  mix well and leave it for some time until it cools down. once you know it is nearly cooling down.
In a large bowl take yeast and 2tbsp of warm water leave it for 5 minutes.
Once you bubbles forming up and this makes you sure your yeast is active, add Oil and the Oatmeal mixture to it with wheat germ and whole wheat bread flour.
Combine them all well together use water if needed I did not use any extra water, knead the dough for 10 minutes, the dough might be a bit sticky, keep kneading just dipping your hand in the flour now and then the dough becomes soft and nice.
Drain the cranberries from the juice spread the dough, add the cranberries to it, mix well into it.
Oil the bowl and the dough Keep it in a warm place for at least 1 and 1/2 hour or until the dough doubles in size.
Preheat the oven to Gas Mark 3 / 170degree
Punch the dough once it is doubled, make 9 balls out of it, In a baking sheet sprinkle some flour and keep these on it, press them a bit.
Leave these rolls for an other 1/2 an hour or so or until you see that the rolls are rising again.
Sprinkle some oats on it and brush it with milk or either way.
Increase the Oven to Gas Mark 4, place the baking tray and bake for total 20 minutes.
After 10 minutes turn the tray for equal baking and reduce the temperature to Gas Mark 3 and bake for an other 10 minutes.
Remove the tray from the oven and place it on a cooling rack, after 5 minutes remove them from the tray and place them on the cooling rack, Just to ensure the base of the rolls don't get soggy because of the heat from the tray.
leave them to cool, slice them or top them with maple syrup and enjoy these delicious rolls.

Eggless Scotchilla Cookies - Made with Oats. Hello everybody, Hope you are all doing, well, me ? quite tired, I had friends around weekend so that's it, It was cooking, cleaning and site seeing.  Weather hasn't changed much it's still raining, With wind blowing at 70 - 80 mph, my Tomato Baskets, fell down, got really scared thought all the hanging baskets might fall down and decided it is better to bring them all down until the wind subsides, Wind is gone and sun is gone as well, very depressing, have to wear jackets and shoes again, it's become a bit chilly at this end of the city :(, Weeds have come up again, need to pluck them out ( hate this job ), I had actually planned to sprinkle some Veedol when the weather was dry, after I had completed my gardening, but all my plans took a different turn when the rain started reigning over us and our sunny days have disappeared, All my seeds have become little seedlings which need more of a firm place and more soil to grow well and nice. It's such a pity  they are still in my conservatory !!, scared to put them out because of the torrential rains, which has turned down to drizzling rain now, hopefully it will stop and I can see the sunshine again, which the British people and the dear plants need at this time of the year :).

Coming back to this recipe, it is SRC time again, The Secret Recipe club of Amanda who is founder of this club has transferred her reins to April Tuell who is our new Head now, whom we all welcome with love and affection and would love to tell her its great to be with you, but do miss Amanda., Best of luck to both of them with their new ventures. My host Suzanne had assigned me to this blog Restored of Robin, don't be alarmed by the name, her blog is called Penny Pinching Provisions but she has renamed her blog title to Restored, so why is that ?, As she herself says she decided to Restore her health, simplicity and happiness, She says her blog focuses on good and healthy food, simple living and financially living frugally. So, I don't have to tell you more about it, as now you know what her blog stands for with some amazing recipes I have book marked a few and want to try them out, I tried already two of them and they turned out very well, I chose this for my SRC post as it is her own recipe and she has given a new name to it..!!!
When I was going through the bakes ( as I love baking ), this one caught me, I first thought this must be from some place, funnily it is her own make up recipe and name :)), So, I just decided on this, Bascially these cookies are called Scotchilla because it is made of Butterscotch and Vanilla  chips, as I had the Butterscotch chips and oats the cookie was fine to bake but the only problem was Vanilla chips, which I have never heard off and now I have to hunt down for it, so I had to omit that and made with whatever I had in hand and a little changes, do check out her blog for the Original Recipe clicking on the link below.  If you want to try it out.  Go ahead and enjoy these cookies as my kids did....

SCOTCHILLA COOKIES
Recipe Source: Adapted with minimal Changes from Penny Pinching Provisions
Makes : 50 (of 20 grms each)

INGREDIENTS:
3 Cups ( 385 grms ) Old Fashioned Oats

1 ¼ Cup (185 grms ) Whole meal plain flour
½ Cup (115 grms ) Butter
1 Cup (165 grms) Fairtrade cane Sugar
1/2 tsp Baking soda
1/2 tsp Baking Powder
½ salt
1 tsp Pure Vanilla Extract
1 Tbsp Vanilla Sugar
½ tsp Cinnamon powder
2 Tbsp Flax seed
1/4 Cup Milk Powder
1/2 Cup warm Milk
6 Tbsp hot water
¼ Cup ( 57 grms ) Butter Scotch Chips
¼ Cup (57 grms) chopped Dates
METHOD:
Preheat the oven to 350 degrees F / Gas Mark 4  / 175  degree Celsius 
Sieve both the flours together then add all the dry Ingredients Baking Soda, Vanilla Sugar and Cinnamon Powder to this flour mixture and combine them well together, 

Soak Flax seed in  Hot water.

In a Large bowl take Melted butter and Brown sugar, cream them well together, to this add Vanilla Extract, Milk Powder dissolved in Hot milk and soaked Flax seed to this and beat them all well together.
To this creamed mixture add the dry Ingredients and gently incorporate the whole flour.
Stir in both the chiips and dates into this cookie batter

Drop these Cookie batter on to the cookie sheets in dollops or make a nice round ball, Press them and bake them for 10 to 12 minutes 
Cool on a wiring rack and Lo! Enjoy these  cookies...

Notes:
Because of the changes I made, I had reduced the quantity of sugar, so they are not too sweet, Perfect for me, as I love oats :),  I made these Eggless, if you want to use Eggs, she uses 1 Egg, she does not use milk powder or milk, I just used all those just thinking of my kids when they are going to indulge in it!, this way they will be consuming some milk too!!, Next time I am planning to reduce the sugar and butter quantitiy.
The cookies were soft but firm, they came out from the Butter paper without any problems they were very enjoyable to bake and eat!! , First time I really sat and ate 3 of them.., I thought they were quite addictive.

Hello everybody, Hope you are all doing well, Yes it's Monday, I think some of us suffer from Monday blues right ? well, not for me :), definitely at least once a month I am very excited, happy and curious why ? why ?..,  Wondering how come I don't feel it, lots of things and once in a month it is  definitely something I truly enjoy it is just because of SRC!!!..., Yup!, It is The Secret Recipe Club reveal day today.., isn't it fantastic...

Every month the Second Monday is SRC time..., and you will definitely see a post from this blog..., Coming to today's post..

My hostess Suzanne who assists Amanda our Founder for this club assigned me to this blog by Sarah 's blog biking and baking, Basically Sarah has brains, beauty, creativity and passion and etc..,, She is beautiful young woman, being a doctor, loves biking and baking :)), You can find loads of vegetarian and vegan recipes in her blog, Yup, you are right , I had a tough time choosing what to try out.., though I don't have neither beauty nor brain but just the passion for baking, I seem to always get attracted to bakes in everybody's blog had a lovely time going through so many of her recipes, She even talks about nutrition and healthy aspects in her cooking and baking, going through her blog one thing I kept went going back to..., it was this recipe, you might wonder what's so big deal about it.., well, everybody has a weakness and I have this weakness for pineapple, I always bake Pineapple pastry and enjoy it so much, I used to buy pineapple pastry even in India, before I was baking on my kids B'days, My kids love it too.., My twins have already told me I have to bake a pineapple pastry on their birthday as I made one for my eldest !!, I know every one of us is crazy about this fruit.., and at last now you know why I chose this recipe.., It was not just the recipe but those pineapple flowers she had made attracted it more..
The next thing was talking about the spring and sunshine, even though we have not got our full dose of summer here, now and then the sun peeping through the black clouds and reading through the recipe about the morning sun, run,shine and these pretty cup cakes with a little reddish yellow and the beautiful tasty flowers will definitely diminish the Monday morning blues out of your mind... make it, taste it and enjoy it.. Thanks sarah for this lovely recipe and thanks to our SRC Hosts.
Check out her blog for the original recipe of these Pineapple cup cakes., as I changed a few things as I did not know where to find Earth balance products, as this was a Eggless recipe I could easily adapt, I changed the flour, you can use completely plain flour instead if you are going to try my recipe.
PINEAPPLE EGGLESS CUP CAKES
INGREDIENTS:
3/4th (96 grms) Cup Plain flour
3/4th (96 grms) Cup Rye flour
2 tsp Baking powder
1 tsp Baking soda
pinch of salt
1/2 Cup Sugar
1/4 cup Sweet Freedom 
2 Apples (181grms without peels 169 grms without the pith )
1 tbsp Vinegar
1 tsp Pineapple flavouring
1 tbsp Flax seed powder
3 tbsp hot water
1/4 Cup Milk
1/4 to 1/2 cup Pineapple juice

Ingredients for Making flowers

1/4 Cup Sugar
1/4 Cup Water
12 Pineapple rings

METHOD:

To Make Pineapple Flowers
First of all we need to make these pineapple flowers, Using a cookie cutter cut pineapple rings just like shown below or you can even buy ready made tinned pineapple rings cut these rings into 1/4'' slices ( I mean not too thin not too thick slices ).
In a bowl take 1/4 Cup Sugar and 1/4 Cup water and allow it boil when it is boiling add 3 Rings at a time and cook it for 2 minutes then carefully remove it on to a baking parchment do this for all the rings.
Bake these rings in a oven at Slow cook mark that is below Gas mark 1, it took 1 and 1/2 hours for me to make these beautiful rings.
Remove them from the oven and allow it cool.

To Make Pineapple Cup Cakes
Preheat the oven to Gas Mark 2 ( Sorry I don't heat the oven to the original temperature),
Line 12 Muffin tins with cup cake liners, spray some oil or you can just leave it as it is ..
Measure the flours ( Plain and Rye ) to this add, Baking Soda, Baking powder and salt, sift them well combined and keep aside
Peel, core and chop the apples, put them in a bowl of water with a tsp of sugar so they don't change colour.
Take 1 tbsp of Flax seed powder with 3 tbsp of Hot water then add apple pieces, vinegar and  milk blend them all in the mixie / food processor it turns into a smoothie kind of consistency.
( if you had not added vinegar, it would have become a fantastic smoothie !!)
In a large bowl, add this smoothie, to this add sugar, Sweet Freedom and mix well until well blended, to this add the sifted flour, until well incorporated.

Pour this batter into the cup cakes 3/4 th, take a pineapple ring, twist into a flower like and insert it into the batter.
Bake these cup cakes to 25 to 30 minutes, or until a skewer inserted comes out clean.
Remove these from the oven once baked, when it is still hot spoon pineapple juice into them so they would observe it quickly, take them out of the muffin tins and cool it on a wire rack.
If you want you can top it with Butter cream frosting or just eat it ...
Yummm yum yum.....

Hi everybody, can you believe I just made my assignment just now this month, I wanted to make it today, as today my dear girl turns 18 :), Yup.., My daughter is eighteen and I can't still able to digest this..., My Angel, My little girl is all grown up. I have been is so busy from morning , I still have to cook, I still have  to make her favourite cake, Pulav, Manchurian and her Gulab Jamoons.., so now you know my menu for today.., that is all her wish and doesn't want anything else! , she is not a chocolate person.., but other family members are die hard fans of chocolate, So not to make them feel bad we decided to go for this one.., The only thing she wanted me to do was write her initials on everything i make for her today!, silly girl.., Anyway I have done as you can see.  It was quite in a hurry I made all these, I was so tensed thinking last minute if I don't do this properly Amanda is going to kick me out of the club and a blog will be orphaned!, Oh! my No.., thanks to Heather this quick recipe turned out perfectly..,  (not exactly there were little tiny holes though).

Sorry I need to get back to this posting right ? well, today is SRC .., The Secret Recipe Club of Amanda's has grown up to a very big family and has hostesses to take care of her little club grown to be a big one now.., This month I was assigned to It's Yummy to my tummy of Heather's from my Hostess Suzanne who blogs at Thru the Bugs on my wind shield.

Heather is such a sweet heart having two little kids she finds her way through cooking from lot of sources and a baker just like me.., she loves baking and shares it with her friends.., I wanted to try her pumpkin scones and few others but my daughter wanted me to try this out.  I just couldn't say no to her as it is her day to day.., She has tried and tested lots of recipes.., hop on to her blog and check out some fabulous recipes you may want to try out!
Coming to the recipe.., it was a very easy one, only thing I had to restrain from myself was not trying to lick them of my fingers.., even though I am not a big fan of chocolate, I like dark chocolates the chocolates I have used here are 70% Cocoa Lindt chocolate and Swiss Milk Chocolates.
Here goes the Recipe hope you all enjoy just as we did and enjoy the whole group who have tried out many reicpes you might like to give a peek..., I made a little change or should I say addition to the recipe, just to make it more healthier., even thought it is not completely made of chocolate..

CHOCOLATES AND NUTS SWEET HEARTS

INGREDIENTS:
FOR THE CHOCOLATE COATING:
8 oz Semi Sweet Chocolate ( I used 70% Cocoa Lindt)
8 oz Milk Chocolate ( I used Swiss Chocolate)
1 tbsp Shortening

FOR THE FILLING
1/2 Cup Chunky Peanut butter
2tbsp Unsalted butter
3/4th Cup Nuts ( Pecan, Pistachio and Hazelnuts)
1/8th tsp salt (I just omitted)
3/4th Cuip Powdered Sugar
2 tbsp Honey

METHOD
First of all in a double boiler method or in a microwaveable method ( 20 -30 seconds) melt both the chocolates with the shortening, I used double boiler method as i was multi tasking. Keep a bowl with quarter of water say around 1or 2 cups and allow it boil, meanwhile chop or break into pieces your chocolates into an other bowl with the shortening then keep this bowl on top of the boiling water bowl, before keeping completely reduce the flame, it should be simmering, place the chocolate bowl and start mixing, slowly it would have started dissolving completely.., Meanwhile when this process is going on....
I took the extra nuts I used chopped them up and gave a toss on a tawa (girdle) with 2 tbsp of Honey and lightly roasted them for few minutes and kept them aside.
Meanwhile take an other bowl add peanut butter, butter, chopped and honey roasted Nuts and powdered sugar and mix them well completely well combined, Keep it aside.

Now take whatever desired pan, cup liners of any shapes and sizes you would want to make these and line them with melted chocolate paste.., She says coat them up completely so the peanut butter filling doesn't peep out.., for that she had refrigerated the liners for few minutes so she was sure.., I took her advice because mine was a lot more filling and the Heart shape I used were quite big.

So I coated them and left them in the fridge for few minutes when I took them out they were almost getting to dry, Now I spooned the filling up to the brim, and poured the chocolate over the filling, I still had lot of chocolate left over!, I think my coating of the chocolate was quite thin.., Just now when I was typing I realised, well it has not gone for a waste as I am using it for my daughter's  birthday cake!.

It's Monday Morning, I had Muffins and a Quick Bread to go for a Morning Breakfast, wholewheat and Clementine juice blended in Baked goodies.., what else do you need for a healthy eating... and for cravings too.., Coming to this particular recipe I have to say a few things first - Never compare my blog with hers she is an amazing photographer, with beautiful clicks, mouthwatering recipes.., lovely write ups.., I was mesmirized with those beautiful photos, I jumped from recipe but ended up making these as my girl loves anything citrus, I had a few recipes which caught my  attention were this, as I had only baked with blueberries but not with lemon in it, then these goat cheese biscuits, then this one, with different flavours and a healthy one too.., I have book marked all of these to try out soon...
You must be wondering why so much introduction.., well for two things, always give credit to the blogger who tried and tasted this recipe and blogged about it...., and with lovely clicks made it more interesting for us right ?, so the other reason is it is SRC time..., Yup..., Love The Secret Recipe Club started by Amanda and the other fabulous girls who are with her to help her run this club so smoothly.., Thanks to Amanda, Angela, Jane, Suzanne and Tami.
This month Suzanne paired me with Dash of East - Melissa, Check out her blog.., beautiful girl, wonderful photographer, web and graphic designer... as she says speaks through photographs and her recipes and her lovely write ups..., Here I have adapted the recipe for making it eggless, and made a few changes and I have halved the recipe. Check out the Original recipe here, I am planning to make this again with Eggs, so I would understand the bread more.

EGGLESS CLEMENTINE QUICK BREAD 

Adapted from Dash of East minimally she has in turn adapted from Marta Stewart

INGREDIENTS:
115 gms Plain flour
75 gms Rye flour
60 gms Soya Dairy free butter
1/4 + 2 tbsp Cre'me Fraiche
1/2 tsp Baking powder
1 tsp Baking soda
1 tsp Vanilla extract
1/2 + 2 tbsp Soft Brown Sugar
1/4 cup Silken tofu
1/4 cup milk
2 tbsp zest of Clementines
1/4 cup Juice of Clementine (I used 2 clementines with its segments)
1 whole clementine segments

METHOD:
Preheat the oven 10 minutes before baking to 350 degree F/Gas Mark 4
Juice of two clementines with its segments in a manual juicer
Take both the flours, BP, BS and salt. Sieve everything together 2 to 3 times and keep aside
I took cre'me Fraiche, silken tofu and soya dairy free butter and milk and blended in my mixie (Indian Mixer)
In a large bowl take the blended wet ingredients together to this add Sugar and mix well together.
To this add the extracted juice, segments, zest of the clementines and vanilla extract blend them all together.
Take all the Dry ingredients in a bowl, make a well in the center pour the liquid mixture in parts to the flour until well combined in a circular motion and lifting it from the beneath.
As this is an Eggless one, try not to handle the dough too much.
Bake this for 35 to 40 minutes depending upon your oven temperatures, after 30 minutes check the bread by tester to check if the bread comes out clean, leave an other 10 to 15 minutes (Judge) and again insert a tester to check, if it comes out clean that means your bread is done.
Take it out and leave it on the wire rack for 15 minutes, until it is completely cool.

You can even make a clementine syrupy glaze this is how you need to do it
Take 1/4 cup clementine juice and 1/2 cup of sugar in a sauce pan bring it to boil, in a medium heat, reduce heat and let it simmer for 3 to 4 minutes.

Once the bread comes out of the oven and on to the rack, prick the bread all over, brush this syrup all over the bread, as the bread is still warm it absorb the syrup. Once it is cool, place it on the wire rack top side up and brush the syrup all over the bread and serve it.

My verdict and notes:
I have replaced a few things from the original recipe, as I had no  heavy cream I used Cre'me fraiche, If you plan on making this bread with eggs this recipe calls for 1 Large Egg as I have halved the recipe
The Bread was super soft, It was not very sweet, I loved the crust :), it was very tasty.., May be next time I can make a few changes, I did not do any glazing..,
My kids loved the crust, they wanted me to make it more sweeter, and they told me the bread inside was very soft.

Hi Everybody, Hope you are all doing well, It's been about a month or so I posted anything in my blog!, I had completely deserted my blog, poor thing :(, my kids kept asking me, mom won't you post anything at all..., So here I am again..., I would have still postponed my coming back, If it wasn't for SRC.  Yup  it's SRC time again, and I am sitting and typing this late in the night, as I did not want to orphan a blog, whenever I read a blog was orphaned because of some reason, I always keep reminding myself I will not let down our team, it's team spirit you see hahaha :).
Moving, cleaning, organizing, setting up Oh! yes been a hectic schedule from past one month...Yes I moved into a new home the beginning of December and I had no net connection and my house was not a home with things lying around everywhere and It's been so hectic, kids having their exams so help from their side was almost nil, so H and me had more share of work to do, Of course kids would bring in stuff when I packed everything, with this I had to sort out my kitchen so I could stir out something and eat, I did a bit of baking, I had a Electric cooker, I was scared to bake in it, but felt good when I baked, I thought baking much quicker than the Gas cooker, but my stove top cooking took long so last week I changed the cooker back to Gas. well, I am getting there.., sorting out everything.., tired long hours of hard work.
Oops let me stop here, I think you all know about SRC - The Secret Recipe Club by this time, started by Amanda now co-hosted by Jane, Tina, Angela and Tami.
I have been a good girl and promptly participating every month without missing..., I am in Group C and Angela of Big Bears wife being our hostess had assigned me to  Josie's Kitchen, A very lovely blog, Josie - I liked the way she writes, so homely I thought, she writes and blogs about all the things about her family, food and the way she enjoys cooking, baking and even her mishaps which makes it more nice, I being a vegetarian had very few options in her kitchen, so I looked into her baking section (well I think you know by now I love baking, can't help it) the first thing which caught my attention was her Pumpkin flan, as I always If I am going to try anything from anybodies blog, I like to try their family recipe or their original recipes, and this she says is her family recipe, but the thing missing was the flan tin which I couldn't find it anywhere here (I only searched nearby my place! around 10 miles), then I loved her Rainbow cake it's beautiful with so many colours, hats of to her patience, she says she uses her Dominican Recipe for this cake, well, I never dared to venture that as I was short of time and above all patience.., So as you can see I made these Orange and  Ginger cookies -  funny thing, I seem to get stuck to orange all the time, I have to post a few of them which are in my draft, and did I regret nope, I baked them enjoyed every bit of it, so delicious they were, My kids first holiday cookies....Only I did make a few changes to the recipe not much but a tiny twist.
As it said Orange and I saw all these oranges lying around in my kitchen basket I just decided why not use the oranges so here is my recipe..., Please do not laugh at my photographs as it is very late in the night and I couldn't do anything better in my mobile phone camera, If you want to know the truth  JUST BAKE IT....ORANGE AND GINGER COOKIES - EGGLESS

Recipe Source: Josie's Kitchen adapted with minimal changes

INGREDIENTS:
4 oz butter
1 3/4th Cup Self Raising flour
2/3rd cup Sugar
1 tbsp Dried Ginger
Pinch of Salt
1/2 Cup Golden Syrup
1/2 tsp Baking Soda
1 Egg (which I omitted)
Orange Rind from One Orange
1 Orange
9 slices of Terry's Orange chocolate

ORANGE SYRUP
I made a Orange syrup Kind of I really don't know what to call this, I took one orange grated the rind then sliced of the white skin from the orange then sliced them into thin rounds. Took a thick vessel added one cup of sugar and one cup of water then added these Orange circles into it and boiled them for around 1/2 an hour in a low flame, and kept aside to cool.

METHOD:
Preheat the oven to 325 degree F/Gas mark 3
In a large bowl I took the grated rind of orange, sugar, Golden syrup, Dried Ginger,  melted Butter, salt and  Baking soda  mixed them well together.
Then from the Orange syrup I took out the Orange segments added them into the bowl and mixed them thoroughly kind of mashed them not too much though.
Then chopped Terry's Orange chocolate added them to the bowl with the self raising flour, mixed them thoroughly
Lay a butter paper/Baking parchment on a Baking sheet and put a spoonful of the batter with giving 2 and 1/2'' apart as this spreads!
(The first time I baked I hadn't given not too much space and even spread them a bit, was a little mess, they spread so big)
Keep an eye on them bake around 8 to 10 minutes and take it out to cool down
Not to worry they peel out nicely., may be a little bit sticky, might be because of the fresh fruit in it, and the cookies were quite a bit on the softer side.
Next time I want to bake with whole wheat flour may be a bit extra flour and may be they might turn out harder, but nonetheless the cookies were damn good and with a Gorgeous smell.

I was careful the next time,  just a dollop of the batter and baked them.... they came out cute.., but none was left when I came back to take photos!.
The biggest culprit was H, as it was more on the sweeter side, he couldn't resist, I know all of them would be gone by morning as they holidays and they are sitting and watching a movie..
