So, how have you all been?  I know I often do a peek-a-boo when it comes to my blog!  but, I won't abandon it for sure and I promise you, you will be seeing more here soon.   I am in India enjoying my holiday! well, this was a very surprising holiday actually and it got extended as well and I will be going back soon l!  I have been running around visiting all my family and friends it's a blessing to have people around you who love you right?  I feel I am blessed that way!

Here is a quick recipe for you all to enjoy! When you get your favourite Alphonso, pineapple and the fresh coconut which is very different from what I get in UK!  Then this Tropical Vegan smoothie is all I wanted to indulge. Put this bowl in the fridge and you would love it as is so cooling in a warm climate.

Vegan Tropical smoothie bowl

These Tropical fruits Pineapple, Mango, Coconut are blend to make a smoothie bowl which is just scrumptious and also a powerhouse of nutrients.

Smoothie Bowl Ingredients
1 Cup of Pineapple Juice from 1 cup of fresh pineapple
1/3 Cup of fresh Coconut
4 tbsp of Porridge Oats
½’’ Ginger
1 tbsp of Omega mix (A mix of sunflower seeds, sesame seeds, Pumpkin, Linseed)
¼ Cup of Agave Nectar / Sugar

Toppings
1 small Banana
¼ cup of Pomegranate
4 slices of Mango
Shavings of Coconut to garnish

Directions

  1.  Blend Pineapple chunks with ¼ cup of water, filter the juice out of it.
  2. Combine everything under smoothie bowl ingredients in a blender jar and blend until smooth and there are no chunks remaining.
  3. Pour into a bowl and add all toppings. Slice the Bananas, top it with pomegranate, Mango and coconut to make it more scrumptious and tasty.

Notes and Tips :  

The Oats which I have used here is Quaker Rolled oats.

I have used fresh coconut, to get a fresh coconut, break open a coconut, using a knife or scraper I take out the flesh chop into little pieces and blend them in a mixer. You can also buy fresh coconut in Asian Grocery shops or online.  If you cannot find fresh coconut you can use tinned coconut milk/ cream instead.

If you use fresh coconut, when you break it open you get coconut water in it, filter the water sometimes there will be remnants from the coconut skin, you can even use this water to blend with the pineapple chunks to get the fresh juice.

Oats and Oranges cookies

When the cookie monster attacks you, you can't just eat one and leave it especially these cookies :),  That's how my kids feel when they eat these cookies.  My children have declared that  this is the best cookie their mamma makes.  This is the best oatmeal cookies you can dream off.  I mean you can think off.  I would actually like to dedicate this cookie to my dear friend Madhuri, she loved them so much, she kept pestering me to post the recipe ( this was around 2 years back!! ) at last I made it to the blog!. I have been making these from around 3 to 4 years back, I know I never posted it.  It was usually in a jiffy I used to make it for some reason or the other, either to pack it for my kids or gift it to somebody and never got time to take photos, Oh! No, I did once but they were crap so discarded them.

Oranges, Oats, Raisins and chocolate chip cookies

These cookies are a killer combination, I would say combination made in heaven. If you have visited my blog you would notice that I love orange and chocolate combination a lot, works out perfectly a match made in heaven. I would say just like Tomato, Mozzarella, and Basil on a Bruchetta.

This is my top notch recipe. Everybody who has tasted my cookie love it.  I have always got a good feedback from everybody.  You should try it out and tell me if you like it.  Baking cookies is an easy peasy job and also kids would love to get involved, They are all grown up now and they don't get time to do things which they enjoyed when they were little.

Oats and Oranges cookies

Did I tell you, we had been getting some jobs done in our house and we had people working for various jobs and I fed them with my cookies and asking them about how they would rate it.  I remember one chap thinking!! he started munching and went on saying Mmm.., these are really delicious I can get the taste of orange and it really is crispy and chewy and very tasty.  This was my recent appreciation which I received from somebody whom I never knew before because I told them I was a blogger and would really appreciate their honest opinion.  what else would I need, one happy satisfied baker, they even asked me for the recipe!

Orange, Oates, Raisin and Chocolate chip Cookies

Oranges, Oats, Raisins and chocolate chip cookies

Recipe Author: Jayasri
Recipe Type: Breakfast/Tea-time snack
Prep time: 10 minutes
Cook time: 15 minutes
Shelf time: 4 to 5 days
Makes: 15 to 18 cookies

Ingredients:

1 ¾ (175 grms) Cup Rolled Oats
50 grms ( 1/3 cup) Whole wheat flour (atta)
75 grm Butter
½ tsp Baking powder
1/8 th tsp Baking Soda
1 Cup Orange Juice ( from 2 Oranges)
2/3 cup Brown Sugar
¼ cup Raisins (dried grapes)
¼ cup Chocolate chips
2 to 3 tbsp of Orange zest

Method:

Zest the Oranges, Squeeze the Orange juice ( I got nearly one cup of orange juice minus 1 tbsp) and keep aside

Take a large bowl take butter and sugar blend them well until well combined.  To this add Oats, whole wheat flour mix them with your hand until they resemble like crumbs to this Baking powder and Baking soda. Mix well.

Mix Oats, whole wheat flour , Baking powder and Baking soda. Take these dried ingredients and mix well with the above mixture using your hands they will resemble like crumbs.

Add Orange juice and zest and make it into a dough-like consistency, to this add chocolate chips and Raisins.

The dough will be a bit sticky not to worry it will be fine.  At this stage put it in a refrigerator for 1/2 to 1 hour.

Preheat the oven to 180 degrees for  15 minutes.

Take a cookie sheet place a parchment paper, using a scoop make round balls and flatten them a bit and place them on the sheet with a gap of 1 to 1/2''.

Place the cookie sheet and bake for 15 minutes depending upon your oven temperature.  you will notice that it is turning into golden in colour.  Take it out and allow it cool, before munching.

Notes:

  1. I have baked these cookies many  times in different ways.  I have used just oats only without any flour and it turns out really well.
  2. You can bake it with one large Egg if you like to use egg in your baking.
  3. You can substitute all-purpose flour instead of whole wheat flour.
  4. So, which Oats to use? you can use any Oats, I use porridge oats or Rolled oats, If the Oats are thick just grind it into a powder and use it as needed.

I think this is the month of Dutch specialties  Yes, I will be posting an other one, which I baked but I haven't posted.  Already this post is 1 day late, This is a very delicious cake I baked,  so say our customers (@home!!), and they recommend my cake to our friends as well, My kids have been praising me so much, they just loved the coconut in it.., If your coconut maniac like me you will just love this, I myself couldn't resist eating it.

As always I have changed the recipe to Baking it Eggless and also made it vegan.  I was a bit scared how it turns out.., to my astonishment, it was a total success.
Before going on to my cake recipe, I have to tell you that this might be not your choice of cake, as I have used a different flour, you might not want to try it out, If you don't like you can just stick on with All purpose flour / Maida flour / plain flour.  The cake was a bit chewy but so so soft couldn't believe it.
This is how I made it..
EGGLESS AND VEGAN DANISH CREAM CAKE - DROMMEKAGE FRA BROVST
Recipe source : Diana's Desserts

INGREDIENTS:

125 gms Self Raising flour
100 gms Barley Flour*
1 tsp Baking Powder
1 tsp Baking Soda
1/4 cup oil / coconut oil / soya spread
200 ml Coconut milk ( I used ready made )
1/4 soya custard milk ( or use just 1/4 cup warm water)
1 tbsp Apple cider Vinegar
1 tsp Vanilla essence

FOR THE TOPPING 
100 grms dessicated coconut
225 grms of brown sugar
1/4 cup powdered oats
1 tbsp coconut oil

METHOD:
Preheat Gas Mark 4 / 180 C**
Grease a baking 8 - 9'' square or round tin with parchment paper and keep it ready.
Take all the dry Ingredients in a large bowl both the flours, baking powder and baking soda, sieve them all well together and keep aside.
.In an other bowl take coconut milk, vanilla essence, oil, Apple cider and coconut sugar, beat them all until well combined.
Immediately start adding the dry Ingredients in little quantities, until all of them is incorporated completely.
Pour this batter into the tin and bake for 20 - 25 minutes ***, until well baked or a tooth pick inserted comes out clean.
Meanwhile when it is baking make the topping and keep it ready.
Once the cake is ready remove it from the oven, leave the oven to 200 degree / Gas mark 5.
Spread the topping on top of the baked cake, put it back into the oven and bake it for an other 10 minutes, Remove it from the oven cut it into squares and serve it.

This total is not exactly a Danish cream cake, I have changed to my liking as this was a  challenge, we have made it Eggless according to the challenge.  To make it more healthier I have used Barley flour.  If you want the real Danish cream cake, check the link above and make this wonderful cake.  You will definitely love it.

VARIATION AND NOTES:
*I have used Barley flour for healthy baking you can just substitute with plain flour which might have a superb  texture and won't
** I baked this in Gas mark 3, as always I say my oven gets too hot and burns loads of my baking!!
*** As I baked it in lower Gas mark, I had to bake it for around 30-35 minutes.

VERDICT:
The cake was bit chewy, but very delicious, If you love coconut, this is the cake for you, My kids really loved it so much, I had never seen my children eating dessert immediately after food, they ate promptly and recommended to my friends too...
something new and something you should know...
I have used coconut palm sugar, which is not too sweet, it  was quite expensive, I started searching about this product and I have come to know much about it, I will do a post about this soon.., After that you can decide do you want to use it or not, I thought I could recommend it  to people with diabetes, even though it has low GI Index, it is high in fructose, as Googling I found out that sugar is sugar, and use it less is good.  This has a Caramalized taste, It is not too sweet, so your cake will not be too sweet, you can substitute ordinary sugar, brown sugar, caster sugar etc.., It is golden brown in colour and is unprocessed.

Hi Everybody, Hope you all had a wonderful Christmas, I am a bit late, but nevertheless, Merry Christmas to all my dear readers, friends and family.
I have been very busy from past three days with friends and family around, it's been a busy Christmas than I usually I do, Every year during Christmas I used to be in my sister's home, with lots of fun and baking and cooking, but this time I had the family around in my place, so I had no time to sit in front of the computer and  write any posts, and felt very bad because I couldn't wish anybody either. Anyways, better late than never...
Here's ''Wishing You All A Very Happy Merry Christmas''.
I made these cookies as I had some Passion fruit at home..., will straight go on to my recipe...

EGGLESS PASSION FRUIT COOKIES


INGREDIENTS:
150 gms All Purpose Flour
25 gms Oats
3 Passion Fruit Pulp
1/4 tsp Baking Soda
150 grms Sugar
75 grms Butter
1 tbsp whipping cream

METHOD:
In a large bowl take all the dry Ingredients the flours and Baking soda  and mix well together.  To this rub in the butter and Sugar then add the pulp of the three Passion Fruit.
Mix well add whipping cream and bring it into a dough, Place this dough in the fridge for half an hour.
Make little round balls and bake in a preheated oven 170 degrees/ Gas mark 3 for 20 minutes.
They turn out to be in Golden colour.  Remove them on to a wiring rack.
When cooled they were soft and chewy.

NOTES:
The cookies were soft and chewy, and tasted very well, My kids were saying that they tasted like Mysore Pak, this is a Indian sweet very famous in south of India.  I was quite happy with the result.., do try it out and tell me if you liked it.
Funnily I made some Indention thinking they might show up and my cookies will have a beautiful design on it,
but they spread out and did not show any design at all, but  that didn't really matter but tasted delicious.
I used Whipping cream, you can use Yogurt / water or any other thing for binding..., you can even substitute and one Egg.

These cookies go to Champa's Bake-a-thon event baking with me are Priya, Sumana, Preethi, Srivalli and Veena.

Days are becoming gloomier and the rain making the days much lengthier telling us winter has stepped in :(, The other day we had this heavy rain fall poured suddenly when we were Windsor Castle, with loads of Hail stones, giving us shivers around shoulders and  palms, Weather turned so cold, I cursed myself not taking gloves and rain coat nor an Umbrella. I usually never go out without my umbrella. In UK it is one of the most important thing we need to carry as we never know what the next few hours of weather we would be having :)), some of my plants have found their way into my conservatory, we had a horrible frost as well, worried they might kill my plants. what have you done ? Do you have some precious plants you don't want them to die, what plans do you have to protect them.
Oh! wondering why I am here today, as I am not blogging regularly these days as I already told I have been really busy as my Mom is visiting me, and blogging is lagging the attention it needs.
An other month and An other SRC already. this month Suzanne my hostess assigned me to Le Ann's blog who blogs at Highlands Ranch Foodie.  Ranches, Cow Boys, Texas, Cattle Ranching was all those things I used to read when I was a young girl in books and wondered Wow what a life.  Reading Le Ann's blog I found that she lives in a place which used to be a place where they had cattle Ranches and she talks about it in her space. She says that she loves preparing authentic Mexican food and recipes that reflect the flavours of the west.
I was looking for something to bake, and this recipe caught my eye I have also book marked an other two recipe, I loved this one as it was Healthier and made with Linseed/Flaxseed, my daughter loves eating cheese and this would be a perfect one for her munching tidbits.  I just made little changes to the Original recipe.

FLAX SEED, CRUSHED PEPPER AND SUNFLOWER SEED CRACKERS
Adapted from : Highlands Ranch Foodie 
Preparation : 15 minutes
Baking time : 20 minutes
Yields : 9 Crackers

INGREDIENTS:
3/4th Cup Whole wheat Atta
1/4 cup Oats powdered
2 tbsp Butter
1 tsp crushed pepper
1 tsp salt
2 tbsp ground Flax seed meal
2 tbsp whole Linseed / flaxseed
1/8th tsp baking soda
2 tbsp thick yogurt/curds
2 tbsp water

METHOD:
In a large bowl take all the Ingredients except water and mix them well enough until they are well blended, to this add water as needed and make it into a nice firm dough.
In a baking sheet spread the dough in a rectangular shape, top sunflower seeds on then then as a topping, using Roller pin roll them once again with the toppings.
Cut them into 9 equal pieces with the help of a pizza cutter, keeping them apart, separate them out and bake them for about 20 minutes in a preheated oven  just 10 minutes before.
Remove them on to a cooling rack, they just slide off easily and here you are with your crackers.
Enjoy topping it with some cheese and some salsa.

Make it Vegan : By substituting butter with oil and yogurt with just water :))

Hi everybody, Hope you are all doing well, I know I have disappeared from few days, it's a long gap between my posts, well, I have been so busy as Mom is here :))., Oh! I know its so wonderful to be with her here and enjoying her cooking completely. My kids have declared that their Mom is a super cook but their Paati ( Grandmother/Nan) is the world's best cook.  I will have to write about it more in my authentic recipes, which I am planning to post soon enough.  The reason for this little intro for my absence was because I took Mom few places here and still I need to show her some more, fingers crossed hope I will be able to cover as much as possible and I really don't want to miss this opportunity as she won't be coming back here again :(.
Today, I had to come to post this as you all know today is SRC Reveal Day. I thought of writing to my Hostess I might not be able to do it, but I just couldn't do it and really don't want to miss it, for two reasons going through Heather's blog when ever I had time, as her blog was in my phone permanently which I always do when I am assigned a blog!! and  I really wanted to bake and of course team spirit for SRC.
I feel  guilty and I never want to miss out, as this is such a big team and the stress and strain to manage this large group is not a easy joke. Hats of to the SRC team for that and thank them that I always come back to blogging just to post from SRC even sometimes I don't want to!!.

Suzanne my hostess had assigned me Heather's blog. She blogs at Fit Mama Real Food. A wonderful blogger with versatile things she blogs about. I had bookmarked a few like the Moist Banana bread, Zucchini Bread, Energy Balls, Nutella Balls and this Lemon and poppy seed bread. I have been going through her blog quite a few times when ever I got time to browse.  She is a fitness freak!!, Mom to a cutest kid, a good cook and loves to bake and cook good food no processed food and loves to eat what nature provides which turn into meals to please the little crowd!!, DIY and Organizer too.., and of course she is a food blogger, click on to her website you will know what I am talking about, I enjoyed going through her blog and do you want to know why I settled on to this recipe.., Just because of those words she wrote in this post made me feel that is what I always keep thinking when I get free time..
As Heather says:
Baking is total relaxation time for me.  When I need to get my mind off things, I head to the kitchen. When I’m bored I will bake.  If I want to procrastinate, I will bake.
I love to bake particularly Breads.., that's my favourite.
Coming to this recipe I had no poppy seed in hand and just got carried away with the recipe., I loved the texture of her bread as she has used Eggs (2) if you plan to make this Bread check out the original recipe. You will know what I mean. Looks really Gorgeous.  I had some Tutti fruity at home as I had baked a Bread out of it for them to take to school, the Left over filling I used it in this bread.  The bread isn't too sweet, it has the Lemony taste to it.

EGGLESS WHOLE WHEAT AND OAT MEAL LEMON, POPPY SEED, COCONUT AND FRUIT  BREAD
Adapted from Fit Mama Real Food with minimal changes

INGREDIENTS:
1 Cup ( 145 grms) Whole Wheat Flour
1 Cup (95 grms) Oat Meal Flour
100 grms Dried Fruits ( Dessicated sweet Coconut, Mango, Pineapple, Raisins, Cashews, Almonds )
3/4th Cup Natural Cane Sugar
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1/4 Cup Butter
1 Cup Yogurt
1 tbsp Vanilla Essence
Zest for 1 Lemon
3 Tbsp Lemon Juice
1 tbsp white Poppy seeds ( Indian variety)

METHOD:
Preheat Oven to Gas Mark 1
In 2 tbsp of hot water soak Poppy seeds until you prepare the rest of the ingredients.
Take both the Flours and sieve together and keep aside.
In a Large bowl take the Lemon zest, Yogurt, Lemon Juice and sugar and mix them well together.
Grind poppy seeds with water into a paste ( It won't become too smooth ), add this to the above mixture to this add Baking powder, Baking soda you will start seeing bubbles forming.
Add melted butter to it and mix well.
Add Dried fruits to it.
Add the prepared flour little by little and mix well together don't over mix it.
Pour this on to the prepared Loaf tin and Bake at Gas Mark 3 for about 45 minutes and bake for an other 5 more minutes reducing the temperature to Gas Mark 2.
Totally bake it around 50 minutes I changed temperatures because of my oven.
Insert a toothpick to find out if it comes out clean then it is baked.

Take it out and cool it on a wiring rack leave it for a few minutes then slice it and Enjoy..,
This is perfect Tea Bread can also be enjoyed as a Breakfast bread.

I know you must be wondering two posts in a day, I am not surprised, because last post was completely ready to post on the festival day, but missed posting it and it just carried on.. :), so decided to post it today morning, and this post is definitely will be posted today, as you all know today is SRC time :). The Secret Recipe Club is my Favourite time...

Every month I usually forget the dates and days for the posting of the events I participate, but with SRC I usually never forget the date, but most of the time I take a last minute decision to make the recipe, as I keep going through the blog whole month wondering what shall I make, but keep going through the blog, I think I usually get stuck to the recipe on the first round I look at a recipe and end up making it.
This month suzanne, My host has assigned me to Belcher town bites, of German mama, This is a blog from A to Z means Arepas to zwetschgen, totally wondering now right ?, I think she has baked and cooked from A to Z from every place on the Globe. If you want to find a recipe from some country just look into her blog you will find it, I couldn't really go through the whole blog, too many recipes to choose from, I first thought making some salad she has some 35 different salads!!, then wanted to try Turkish bread, but when I was googling, I was wondering about the toppings and the way it is made so the next one I kept going to was these Canadian Oatmeal rolls, the Maple syrup and oat meal attracted me to that recipe. She has wonderful blog with some amazing names and different recipes from nook and corner of the world.
Let's get back to the recipe then, I was browsing through google and was wondering what was so different about the oatmeal rolls, I have always baked oatmeal in my recipes but this was a little different.  I found out that they have used Eggs in one website, I found this recipe made with molasses I adapted some things from this recipe but left out molasses. I wanted to stick to the basic recipe from her blog but made with minor changes from her blog and made these rolls, they were delicious and turned out very well.
I really don't know how exactly the rolls are made, I wouldn't say that this is the authentic recipe, if any of you know the exact recipe do pass it on to me..
Here is how I made them...

NOVA SCOTIA CANADIAN OATMEAL ROLLS
Recipe adapted from Belcher town bites with minimal changes
Cuisine: Canada
Preparation: 20 minutes
Total time Pre-Baking: 5 hours
Baking time : 20 -25 minutes

INGREDIENTS:
1/4 Cup / 60 ml Milk
1 Cup / 100 gms Old fashioned Oats
1 Cup boiling water
1/4 cup / 60ml Maple syrup
2 tbsp oil
1 and 1/2 tsp salt
1 and 3/4th tsp Active dried yeast*
325 gms whole wheat Bread flour
1/4 Cup/  Wheat Germ (optional)**
50 gms/ 1/4 cup Cranberries
1/4 cup Orange Juice

* I had my last bit of yeast 1 and 3/4th tsp so I just used what I had so I had to change the recipe accordingly.
** I saw this added in one of the recipe links I found so just adapted it to make it healthier, so it is totally optional, you can substitute whole wheat flour or All purpose flour of 350 grms.

METHOD:
In a little bowl take cranberries, soak them in orange juice.
In a bowl take old fashioned oats, salt and  Maple syrup.
Pour boiling water over this oats  mix well and leave it for some time until it cools down. once you know it is nearly cooling down.
In a large bowl take yeast and 2tbsp of warm water leave it for 5 minutes.
Once you bubbles forming up and this makes you sure your yeast is active, add Oil and the Oatmeal mixture to it with wheat germ and whole wheat bread flour.
Combine them all well together use water if needed I did not use any extra water, knead the dough for 10 minutes, the dough might be a bit sticky, keep kneading just dipping your hand in the flour now and then the dough becomes soft and nice.
Drain the cranberries from the juice spread the dough, add the cranberries to it, mix well into it.
Oil the bowl and the dough Keep it in a warm place for at least 1 and 1/2 hour or until the dough doubles in size.
Preheat the oven to Gas Mark 3 / 170degree
Punch the dough once it is doubled, make 9 balls out of it, In a baking sheet sprinkle some flour and keep these on it, press them a bit.
Leave these rolls for an other 1/2 an hour or so or until you see that the rolls are rising again.
Sprinkle some oats on it and brush it with milk or either way.
Increase the Oven to Gas Mark 4, place the baking tray and bake for total 20 minutes.
After 10 minutes turn the tray for equal baking and reduce the temperature to Gas Mark 3 and bake for an other 10 minutes.
Remove the tray from the oven and place it on a cooling rack, after 5 minutes remove them from the tray and place them on the cooling rack, Just to ensure the base of the rolls don't get soggy because of the heat from the tray.
leave them to cool, slice them or top them with maple syrup and enjoy these delicious rolls.

Hi everybody, Hope you all had a wonderful day today - 
Today being the Tamil New year's day for Tamilians , Vishu for Malyalees and Baisaki for Punjabi's and Bihu for Assamese.
I would take this opportunity to wish you all a very Happy and Prosperous New Year ahead.....
Don't wonder why am I posting a Bread recipe on a festival day, well of course, I did celebrate with a very light note, You have to be in India to get into the festive spirit that is what I think, I usually have somebody, friends of course to join me in all the festival celebrations.., today I had nobody, that was quite sad.., Anyway my kids enjoyed the food I made, I will post it on a later date...
It was really a beautiful day, lots of sunshine, think of carrots and you feel very summary.., when I see carrots I think of those cute little rabbits.. few days back I had called my sis, her 7 year old son never speaks with anybody on phone, he dreads it so badly, to just make him talk to me, she said Ammajechi (that's what all the kids call me at home!, I have little story for that, I will write about it someday) is really sad why don't you cheer up her with some jokes.., he really got excited was that my luck, I really don't know but enjoyed his jokes for at least 1/2 an hour, one of his jokes which he read in Chandamama was -
Teacher : Kids tell me why should you eat Carrots ?
Student : Sir, Because Carrots are good for eyes.
Teacher : How do you know that carrots are good for eyes ?
student : Because Sir, Have you ever seen a Rabbit wearing Glasses
:), Hope you liked it too.., that book was my favourite when I was a kid, and he reads it, isn't it amazing that book still is running but only a bit thinner I suppose so I was informed.
Coming back to the recipe.., as I usually bake a bread every week for my son particularly as he like to take sandwich in his lunch box, and he loves these home made breads. especially when you know if I allow him to eat Nutella, that is what he enjoyed the whole week. He said the bread so soft and fantastic.
Here is how I made it..., First of all as it was late in the evening, I was a bit worried about the dough rising so I decided I will bake this in my Bread Machine, so I started with all the procedures for the bread machine, but the end I did not want to bake it in there, I had never tried this out as I had only baked around 4 times in the machine.., I was scared that interrupting it would destroy my bread, so I just used it until the second rising, then switched off the machine, took it out slowly and placed it in my loaf tin, The bread was quite big, I think it was weighing 1250 gms or more. If you plan to bake this BM, watch out that it might touch the top. But, to my astonishment it turned out very well you can see for yourself.
CARROT AND RAISIN SWEET BREAD
INGREDIENTS:
2 tsp Instant yeast
115 gms light Brown Sugar
221 gms Grated Carrots 
1/4 cup Raisins
1/4 cup oil
1tsp salt
4 tbsp Milk powder
3/4 th Cup + 2 tbsp water
METHOD:
Set the Bread Machine to sweet Bread mode.
Combine flours, salt and milk powder well together, either sieve them together or mix by hand. 
Pour water and oil  into the loaf tin (Bread machine) 
Then add  carrots, Next add the flour on top of it covering the water.
Then make a little dent or hole in the flour, here add the yeast.
close the lid and start the process,
After mixing, it makes a sound allowing us to add more ingredients here I added Raisins and close the lid again.
It starts its process again, 
Meanwhile preheat the oven to Gas Mark 5/190 degrees, Keep a bowl of water underneath the rack.
I allowed the Bread Machine to completely its second rising process, then I switched of the machine, took out the raised dough and placed it on to the Baking Loaf tin.

Left it on the counter for 15 to 20 minutes covered just to make sure it will come back its shape again.
I also covered the loaf tin with a aluminium foil loosely but fixed it to the tin well enough so it does not come off.
Then Put the tin into the middle rack and reduce the oven temperature to Gas Mark 4/180 degrees, I usually bake my breads around this temperature, (as i am still not able understand my oven so make sure you know your oven)
Covering with the foil ensures that the bread doesn't have a dark colour on the top because sugar in the bread tends to make the bread change the crust into a darker colour.
Bake for 45 to 50 minutes, to ensure the bread has baked to perfection after 40 minutes take out the foil and insert a long skewer into it, If it comes out clean then your bread has done, other wise leave it for an other 10 minutes and check again, if the skewer comes out clean your bread is done.
Take the bread out and leave it on the wire rack, after 5 minutes, turn over the loaf out of the tin on to the wire rack, leave it on its side or totally upside down.
This helps in bread from having a soggy  base and further cooking, Leave the bread to cool completely before you slice the bread.
When the bread is still warm, it will still be in its baking process.
If you are going to bake by hand...
In a large bowl, First take yeast, a tsp of sugar and 2 tbsp of water and leave it for sometime, when it bubbles up, add Oil and then add the combined flours (which is already combined with salt + sugar + Milk powder)., Then add the grated carrots and 1/2 cup of water and start mixing it with the help of a strong spatula, then keep adding the water until it is well combined.
The dough might be a bit sticky use your Atta Grinder or food processor to knead the dough.
Or use your hand and knead the dough, as the dough might be sticky, dip your palm into the flour now and then and knead again.
Oil a bowl and place the dough and cover it with a cling film, after its first rise, punch down the dough then add the raisins and knead it into the dough, don't knead it too hard and spoil the air formed in it. shape the dough in the loaf tin and proceed with baking as above.
 This bread was especially baked for Magic mingle of Kalyani's #4, she had asked us to use Carrots and Raisins as the challenge.., Hope she likes it and you too.., Try out and tell me if you liked it.., If you have any other variations do tell me I would like to try it out...

Idli is one more thing I have become a big fan of.., well who doesn't Idli.., if you are a south Idli, most hearty breakfast.., A healthy one too.., basically because it is steam cooked.., Idli, vada, sambhar and chutney is one thing you get in every resturant, darshinis,  hotels in south India...
Even Doctors prescribe to eat Idlis if you are sick only minus all the other items with it...!! :).
My love for Idlis became more stronger when I moved out of comfort zone.., that is when I left India, Now the first thing I do when I land in India is.... ?, Eat Idlis and Dosa :).., Oh! I am thinking of back home.., and I envy especially my daughter envies people in India, just because she can't indulge in her favourite food...
I think I have told you I have twins, a girl and a boy :). My Girl loves Idlis and my Boy loves Dosas..., Now you know why I make so many twists..., Oh! ya how can you know because I haven't posted lot of them!..., maybe some day I will.., but still we can talk about this Idli right  ?.., so let's get back to the recipe then...
The Last time when I went to london, my eyes fell on this product - Lapsi, My friend who is from North Karnataka told me I should try it out.., well, why not ?, so I picked it up.., The other day I was searching through my pantry and noticed this cover..., took it out and was musing what to do..., I don't know some smell in the kitchen made my daughter think I am making Idlis.., that was when I thought why not try these..., 
So with this I started pairing things, out came the oats and of course you know my love towards sweet corn.., you must have noticed I keep using these little yellow gems most of the time in my cooking... well put together we had these Lovely Idlis with a special chutney!, I am not posting the recipe for the chutney now as I am short of time and this is my post for.. you guessed right .. for Blogging Marathon.. the last day...
Valli special thanks to you..., in believing me and I enjoyed every bit of it, made new friends.., lovely ladies...., wonderful cooking and baking around the Blogging Marathon...you must check out every blogger in this marathon.., you will surprised of what all they have created.. learnt new recipes too... so here goes my recipe...
OATS, LAPSI AND SWEET CORN IDLIS
INGREDIENTS:
1 Cup Oats
1 Cup Lapsi
1 Cup sweet Corn ( used frozen)
3 Cups of Yogurt
1/2 of buttermilk
2 tsp of Eno or 1 and 1/2 tsp of Baking soda
1 and 1/2 tsp salt
2 stalks of chopped coriander leaves
1 stalk of curry leaves.
SEASONING:
1 tbsp of oil
1 tsp Mustard seeds
1 tsp Channa dal
1 tsp Urad dal
METHOD:
Thaw the frozen sweet corn, and grind it into a paste, then roast the rolled oats and powder them, Roast Lapsi for a few minutes and let every thing get cooled.
Then mix them all together, add salt, chopped coriander and chopped curry leaves.
Then in a small pan heat oil, add mustard seeds and dals fry them for a minute once the mustard seeds splutter and dals change colour switch of the stove, add these seasonings to the bowl of all the Dry ingredients.
Add Soda or Eno whatever you are using, Mix and combine them all well together.
Grease the Idli moulds, once everything is set ready add Yogurt and mix well, then if you find it too thick add extra buttermilk to it and make it into a consistency of Idli batter. (thicker than the pan cake batter)
Immediately pour these into the Idli moulds and steam cook them without the weight in the cooker for around 12 to 14 minutes..
Now your Idlis are ready to enjoy....

These Idlis may not be like the original Idlis still they are tasty with a nice spicy chutney...

MY VERDICT: My kiddo liked ( I can't say loved it as her favourite is the original Idlis !!), she said it was very nice..., and ate it with the sambhar I made just for her.., the other two said it was quite filling and ate with my spicy chutney...., eldest the combo was really good.., Hubby was bit inquisitive ( I have come to know now that if he asks me, what did you do with this recipe means he likes it!).., so I jumped into it and asked how was it.., he said it quite very nice actually and so the family story ends with a sigh that everybody enjoyed a good hearty, healthy breakfast.
Mum is very happy that she found an other recipe which her kids doesn't mind eating... what else do you need ?...

Lemon is my favourite fruit, When I think of Lemon I think of Indian Rice Variety, a simple delicious, flavorful, authentic spicy Lemon Rice  and the next thing I can think of Honey and Lemon Tea (Chai), Mmmm..., delicious healthy refreshing drink.
When the recipe to bake, called for Lemon -  the first thing that came to mind was spicy flavorful Muffins, then I decided nope let me bake really delicious sweet Muffins.., with Honey in it.
Then as always my mind went to bake Eggless Muffins, but decided to try both ways and made both Egg and Eggless Muffins.... so here is how it goes....,

EGGLESS LEMON AND HONEY POUND MUFFINS


Recipe source: minimally adapted from Taste of Home

Makes 6 Muffins

INGREDIENTS:
1/4 cup Butter
1/4 cup Golden Brown Soft sugar
1/4 cup Honey
1 tbsp Fresh Lemon Juice* (see notes)
1/4 cup Yogurt/Hung curds
1/2 tsp Vanilla extract
1/2 cup All purpose flour
1/4 + 2tbsp Ground Oats* (see notes)
1/4 tsp salt
1/4 tsp Baking soda
1/2 tsp Baking Powder
2 to 3 tbsp of Sweetened Coconut

To Glaze*:
1/2 cup Confectioner's sugar
1 and 1/2 tsp of Lemon Juice.

METHOD:
Keep all the ingredients ready and measured.
Line your Muffin tins ( 6 Muffin cases)
Preheat the oven to Gas Mark 5/190 degree Celsius ( Just 6 to 7 minutes before baking)
Sift all the Dry ingredients together (flours, BP, BS, salt) and keep aside.
In a large bowl take melted butter, sugar and honey, cream them together to this add vanilla extract then Fresh lemon juice and Hung Curds/Yogurt give a swift mix.
Immediately start incorporating the well sieved flour in parts so it is well combined.
Do not Over Mix the batter, as it is Eggless baking mix it swiftly in an even circular and cut motion quickly
Scoop in the batter into the Muffin cases and top them with sweetened coconut, give them a little press and bake them in the oven for 15 to 20 minutes or until the toothpick inserted comes out clean.

FOR GLAZING*: You can glaze the muffins by mixing the ingredients in the glaze until smooth and nice and pipe them over the muffins and serve them ...

MY VERDICT:
* Actually I added 2 tbsp of Lemon Juice thinking that I will more lemony taste in it, was my little mistake I think, the muffins did not rise very well, as I always get my muffins well raised!, that was a bit of disappointment, but still it tasted great with that lemony taste in it, and I felt it was more sweeter..., If you have a sweet tooth you will love this...
*As I am using my new oven (GAS), I am a bit confused about the tempratures, the temperatures indicated in a recipe seems to be too much for my Gas oven, The actual recipe asks for you to bake at Gas Mark 6, I did not bake it at that temperature as all my baked turn golden brown quickly so I have little concern, so please do check your oven temperature while baking....
*The Oats which I have used in this recipe is porridge oats, I just simply Grind them to powder and use it in my baking.
* I did not glaze my muffins, I just skipped it as the Muffin itself was quite lemony, you can use some cream cheese frosting or butter cream or what ever you like to eat it with....
* The cake was delicious, there was this sweetness and tanginess in it, it wasn't too moist, when it was baking my daughter called out to me and said Mum it seems to go like a cookie, it is spreading out than going on top, that was when I thought I have used more Lemon Juice, so next time I will try it with just One tbsp if you try this please write to me and tell me how it turned out.
* As it was not too moist I thought you could increase the fat content a bit more, or I thought next time I will use 1 tbsp of Flax seed powder with 3 tbsp of hot water which will compensate on the fat content for the muffins.

LEMON AND HONEY MUFFINS WITH EGG and HERSHEY'S CHOCOLATE

Once I made the Eggless once, I had to make these again, As I always cook or bake only in the night and I had only made 6 of them, I had a bit of a situation.., My friend who stayed with me over the weekend, who never likes eating anything sweet at all gave me a big surprise, I just gave a teneey weeney bit of my Eggless muffins to taste, ate the whole muffin instead and a few minutes later asked me If she can have an other one!, I was totally taken aback (she is pregnant, I thought may be that is the reason), as she doesn't like to eat eggs was very happy with my Eggless ones so the four left was eaten by my family. That's it all gone so I decided on baking more muffins this time with Eggs though, so here is my Muffins with Eggs, this time I shared with my neighbours..

Makes 6 Muffins:
INGREDIENTS:
1/4 cup Butter
1/4 cup Sugar (soft Golden brown sugar)
1/4 cup Honey
1 tbsp Fresh Lemon Juice
1 Medium Egg
1/4 cup warm Milk
1/2 tsp Vanilla extract
3/4th Cup  + 2 tbsp All Purpose Flour/Maida
1/4 tsp salt
1/4 tsp Baking Soda
2 to 3 tbsp of Hershey's Chocolate broken into little pieces

METHOD:
Same as above method, Added one Egg with the liquid Ingredients gave a brisk whisk then added the Lemon Juice and Milk. Just added broken bits of Hershey's chocolate pieces and then Incorporated the flour into the wet mixture, poured them into the cups and baked them at the same oven temperature for 15 - 20 minutes or until the tooth pick inserted in the middle comes out clean.

The Muffins were soft and delicious.., My kids loved it, waiting for my neighbours verdict will update when received..., till then... take care....
