First thing First I have to write this on the start of my post I will be posting two cookies, will have to wait for the third one for my kids to come...., Tried, Tested and very important TASTED and declared most delicious cookies I have baked and want they want more!!.
Baking is what I am posting these days, well, I think you might have come to know by this time that is the most attractive thing I see when I look at a book or a blog or Google, I Oogle at all the recipes with such love that even I decide to bake them ASAP, but most of the time they go into my draft, that is why I have joined these Groups which make me bake, yes, you are right today is the posting of our little Baking Group called the Baking partners headed by our dear Swathi of Zesty South Indian Kitchen, as you all know that we baked Reine de Saba which was our first baking challenge.
This time we had 3 Challenges, swathi consulted three of group friends to pitch in some reicpes, so our most wonderful, innovative, perfectionist and a very sweet and my favourite blogger in the blogging world is Priya, from Priya's Versatile recipes.  let alone I would have written whole page about her, I deeply have a special place for her she never misses to comment in my blog, even if I don't. I feel so guilty so many times. These Corn Flake Cookies were her contribution.

Next was from our Dear Tina, whom I met through Baking partners Group, thanks to swathi, Wow she has a fabulous website Pinay In Texas Cooking with wonderful recipes.., Just fell in love with her blog.. she sent her Ultimate Chocolate Cream cheese cookies.
Next was from Reeni of Cinnamon Spice and Everything Nice, who asked us to make Home Made Oreo Cookies, met her also through BP, who also is a  Beautiful Blogger with wonderful recipes.
As you all know I have been not blogging properly from past a month, as Mom with me, I have become quite lazy and try to spend time with her going around, talking, cooking and arguing with her. Being very busy these days I had decided to write to swathi that I might miss this month's challenge. But when I came back from work yesterday, as always Mum had already cooked, and I had nothing much to do..., I immediately decided I will bake the cookies at least one of them, and started putting the ingredients, I got so carried away I made two of them and the third one is on the way!!.., But couldn't bake them immediately as H took us to our friends place and we returned only nearing 11, so I put them in fridge and baked them today.
The corn flake cookies were so delicous. I have fallen in love with them and can't resist stop eating them!.
The ultimate chocolate cookies, are quite chocolatey for me..., but kids loved it.
Here is how I made it... with few changes, First I halved the recipe, I substituted APS flour with Finger millet flour, and used golden raisins and read between the lines while reading the recipe and forgot to roll the corn flakes but mixed them in the dough. Next time I will bake them again as they are so addictive.  They might not be looking good but totatlly delicious.

EGGLESS FINGER MILLET CORN FLAKES COOKIES
Recipe Source: Baking: A Commonsense Guide - Murdoch Books

INGREDIENTS:
62.5 grms ( 63 grms) Butter
82.5 grms ( 83 grms) Sugar
1 tbsp Flax seed powder + 3 tbsp Hot water
4 tbsp Milk
1 tsp vanilla essence
1 tbsp Golden Raisins
67.5 grms ( 68 grms) Desicated Coconut 
1/2 tsp Baking Soda
1/2 tsp Baking powder
125 grms Finger Millet flour
1cup crushed Corn Flakes ( made by 2 cups of corn flakes)

METHOD
First of all cream butter and sugar, add vanilla essence then Blend flax seed with hot water, then again blend flax seed with milk and make it into a paste like consistency.
Add this to the large bowl, to this add Baking powder and Baking soda, to this add dessicated coconut and finger millet flour then crushed corn flakes.
Mix them all well together make it into a nice ball of dough.
preheat the oven to 180 degrees / I kept the Gas Mark to 3,
Keep the dough for 15 to 20 minutes and make small balls and press them a little and bake them on a baking sheet and bake for 12 to 15 minutes.
You can keep it in the fridge and bake them later as I did.
cool down on a wiring rack.
Enjoy.....,

This was bit of a sudden thing that I had to whip up and bake !, I didn't exactly know how it would turn out!, surprisingly it turned out so well bit of crumbly, not too sweet, bit chewy BUT, YES! a very healthy bake with lots of nutrition in it!, I don't have to go further as you know with the recipe name that it was a healthy bake but is more rich with other goodie things added in it.
When I wrote to Kalyani that I would love to join her Magic Mingle # 2, It was only 4 days for the entry.., she asked me if I would like to participate or I could start with the March Monthly Mingle, and the magic ingredients were Almond and ginger..., Of course I thought of cookies but with my Migraine, I was not up to it, to sit and make all those little balls and bake, then thought I would create something else or anything authentic, not was going on in my mind as Headache had its priority than my thinking taking it over.
I just sat there and my daughter was going through my pantry as usual to see if she can find some chocolates, well I had hidden two Terry's Orange, she was behind it, I refused to budge with her whims then she saw those dates with almonds which my friend H always brings me when he goes to Dubai (I hide that too, that is favourite indulgence as some people who love chocolates!), I love dates, I try and use dates where ever possible, these dates with almonds are my favourite :).
seeing those Dates and Almonds I decided what I wanted to bake immediately, with my little sous chef (who is just 5ft 10''!!), ready to help me we baked these little goodies..,
Here goes my recipe.., may be not everybody would like it but my kids just loved it :), I am truly satisfied mother yet again as I thought I have fed them something healthy, except for the fat content..., it turned out very well...

EGGLESS FINGER MILLET AND OATS SQUARE TRAY BAKE





INGREDIENTS:
100 gms Finger Millet flour (Ragi)
100 gms oat flour * (see notes)
25 gms Rice flour
60 gms chopped skinned Almonds
100 gms Dates (without seeds)
1 tbsp Powdered Ginger
3/4 th Cup Dark Brown soft sugar
225 gms Banana (skinned, I used around 3 small bananas)
1/4 tsp salt
1/4 cup Oi1
1 tsp Vanilla essence
1/4 cup of Cocoa powder
2 (180 gms ) Medium Apples*(peeled and cored)
2 - 3 tbsp water
1 tbsp Apple cider vinegar
1 and 1/4 tsp Baking powder
1/2 tsp Baking soda
1/4 cup Hot water

 


METHOD:
Preheat the oven to 180 degrees/350 deg F/Gas Mark 4 for 15 minutes
First of all mix Finger Millet flour, Oat flour, Rice flour, Powdered Ginger, Baking powder, Baking Soda and salt together.
Sieve everything at least 3 to 4 times until they are well combined.
soak Dates (without seeds) in hot water, just until everything is ready (5 to 10 minutes)
Skin the Bananas and puree them.
I pureed the Dates in the same mixie.
chop the Almonds into bits
Do this in the end - Peel and Core the Apples slice them into bits add 2 to 3 tbsp of water and cook them in Micro wave for 3 to 4 minutes (or according to your MW) until it is cooked soft.
Puree the cooked Apples to this add 1 tbsp of Apple cider vinegar
Take all the wet ingredients together Pureed Bananas, pureed dates, Pureed Apples and oil.
Mix all of them well together to this add 3/4th cup sugar and combine them well with chopped Almonds
Take all the sieved dry ingredients in a large bowl and a hole in the center pour in the liquid ingredients in parts so that all of them all very well combined.
Pour this in a tray and spread them evenly and bake them in the center of the oven for 25 minutes, then check in the center if it is baked, then bake it another 5 to 10 minutes according to your oven with a slight increase in the oven temperature.
Bake it until the tester/ wooden skewer comes out clean.
Remove it from the oven on to a wire rack, leave it for 5 minutes then later on remove it from the tray and leave it on the rack directly to cool down completely
Then cut them into squares and enjoy them....




My Notes: 
I have used Oats flour, you might get oats flour but what I do is I use normal porridge oats grind it in my Indian mixie into a nice powder, I do sieve to get fine powder, I just use it as it is finely ground.
I don't use Apple sauce, you can substitute apple sauce instead of the 2 apples I have used. I always substitute this way when ever I have to use apple sauce, I make this puree at the end of my bake so that the apple does not change the colour of the end product of the bake.

For vegan version use Carob Powder

This is a very well known Tiffin variety of south Indians and the people of karnataka do really enjoy this as it is so filling and doesn't make you hungry for a long time,This is quite a healthy dish, it has more carbohydrates as it is made with Rice flour, but it is such a healthy dish as I said earlier as it uses less oil and you can use a variety of vegetables in this. This is one of making kids eat lot of veggies, when you are making for kids use coconut it becomes more delicious.
I always felt that after eating this you feel like drinking water all the time just like when you eat dosa the same feeling happens and feel as if you are thirsty all the time. As if there is a sponge in your stomach absorbing all the water you are drinking.

well coming back to the recipe Akki Rotti is dish made out of Rice flour and Raagi Rotti is a dish made out of Finger millet flour (Raagi Flour),even you can try making these kind of Rottis with corn flour and fine semolina rawa.

AKKI ROTTI 

RAAGI ROTTI


INGREDIENTS
  • 1 cup Rice flour for Akki Rotti and 1 cup Finger Millet (Raagi) flour for Raagi Rotti
  • 1 or 2 green chillies (optional)
  • salt to taste
  • 2 to 3 sprigs of coriander leaves
  • 1 sprig curry leaves

Basically that is all is required to make rottis but you can add lot of things to make it even more tastier and richer to eat

You can add finely chopped onions.
you can grate carrots, cabbage to it
with the plain above said ingredients you can add a cup of fresh coconut grated which is so tastier. You can add this grated coconut mixed with all the vegetables which i have just been telling about,
You can also add a tbsp of cumin seeds, tbsp of channa dal with finely chopped curry and coriander leaves and finely chopped onions.
You can also add roasted peanut powder with all the above said ingredients which is much more tastier.
During the Avarekkai (lilva beans / Papdi lilva ) season pick out the very tender ones and mix it with the plain basic recipe and make rottis they are absolutely gorgeous to eat.
You can also make these rottis with Methi or Fenugreek leaves
You can use capsicum which is finely sliced with other ingredients

METHOD:
Take Akki or Rice flour or if you are making with Raagi flour the method is the same, In a bowl take the flour add all the ingredients finely chopped coriander and  curry leaves and green chillies mix them together with warm water into a chapati dough consistency and then in a wok with you back of your fingers that is towards the nail side, with the help of water flatten them in the wok in a round shape.

Pour oil on the border of the line and make a hole in the middle and pour little oil in it and cook it in a low flame for 10-15 minutes turn it around once it is cooked and cook for another few minutes and now it is ready to serve with any side gravy of your choice or with chutneys or powders(pudis) of ur choice.
You can also use a plastic or the sheets you make poli or obattu with, to make these rottis then you do not need a wok, you can use a tawa.
Take a small ball of it flatten it on a sheet into a round just like a poli make a hole in the middle and put it on the tawa and cook on both the sides.
I use the covers of boost, horlicks etc for making polis which do not stick on to the tawa or u can also use plantain leaf to make them.
FEW TIPS
Serve them hot which is the best way to serve with coconut chutney 
I love these with any thing my favourite Chutney, chutney podi, pickle or Yogurt, I can eat them just like that, people prefer to eat it hot but I don't mind eating them cold.
I would say once you are hooked to it you will just love it.
Best Rice flour to use for this is which you make it at home :
Wash rice drain away for few minutes or 1/2 an hour then dry them in a shade, once they get dried give them to a mill or you can grind them in a mixie but you need to sieve them to a fine flour.
