Tropical Fruits in the Smoothie Bowl which is vegan as well! Do I need to say anything more?  Studded with tropical fruits like pineapple, Mangoes and coconut blended nothing can get better, the day begins with a summery spirit.

So, how have you all been?  I know I often do a peek-a-boo when it comes to my blog!  but, I won't abandon it for sure and I promise you, you will be seeing more here soon.   I am in India enjoying my holiday! well, this was a very surprising holiday actually and it got extended as well and I will be going back soon l!  I have been running around visiting all my family and friends it's a blessing to have people around you who love you right?  I feel I am blessed that way!

Here is a quick recipe for you all to enjoy! When you get your favourite Alphonso, pineapple and the fresh coconut which is very different from what I get in UK!  Then this Tropical Vegan smoothie is all I wanted to indulge. Put this bowl in the fridge and you would love it as is so cooling in a warm climate.

Vegan Tropical smoothie bowl

These Tropical fruits Pineapple, Mango, Coconut are blend to make a smoothie bowl which is just scrumptious and also a powerhouse of nutrients.

Smoothie Bowl Ingredients
1 Cup of Pineapple Juice from 1 cup of fresh pineapple
1/3 Cup of fresh Coconut
4 tbsp of Porridge Oats
½’’ Ginger
1 tbsp of Omega mix (A mix of sunflower seeds, sesame seeds, Pumpkin, Linseed)
¼ Cup of Agave Nectar / Sugar

Toppings
1 small Banana
¼ cup of Pomegranate
4 slices of Mango
Shavings of Coconut to garnish

Directions

  1.  Blend Pineapple chunks with ¼ cup of water, filter the juice out of it.
  2. Combine everything under smoothie bowl ingredients in a blender jar and blend until smooth and there are no chunks remaining.
  3. Pour into a bowl and add all toppings. Slice the Bananas, top it with pomegranate, Mango and coconut to make it more scrumptious and tasty.

Notes and Tips :  

The Oats which I have used here is Quaker Rolled oats.

I have used fresh coconut, to get a fresh coconut, break open a coconut, using a knife or scraper I take out the flesh chop into little pieces and blend them in a mixer. You can also buy fresh coconut in Asian Grocery shops or online.  If you cannot find fresh coconut you can use tinned coconut milk/ cream instead.

If you use fresh coconut, when you break it open you get coconut water in it, filter the water sometimes there will be remnants from the coconut skin, you can even use this water to blend with the pineapple chunks to get the fresh juice.

  • 1 Cup Pineapple juice (1 cup fresh pineapple)
  • 1/3 Cup freshly grated coconut

Tomato Juice! Some things are very simple in life, but these are not just simple but rich in Vitamins A & C, minerals and rich in Fiber!
Some simple things you don't even think that it ever existed until you miss it.  It may be anything in our life.  Do you know what I am talking about? It's always food.  In this episode, it's a drink!  I have never missed this simple drink at all.  Every summer reminds me of this drink,  which mum used to make it for us when we were little.

My Mom was a working woman, she used to be very busy as she was a teacher, she always had lots of school things to do and had to take care the three of us.  My Dad always helped amma in her housework, it was a really beautiful home set up, feels like I want to go back to those good old days. We had our breakfast time, school time, lunch time, Hometime, snack time and the best was our Dinner time!  All of us would sit together and share each other's stories about the whole day.  I really miss those days so much.

When I started my own family I wanted to it be the same way eating together as a family but it never happened. When my kids were very small it was only the kids and me, we lived in a joint family so in batches everybody used to have food.  After coming here we started having food as a family again.  But,  this has changed again now as my kids live elsewhere for their education, I eagerly wait when they are back for their holidays.

So, Back to Tomatoes yes! they were one such fruit which would turn into a drink when summer knocked on the door, mum always used to whizz it up quickly for us, when she didn't have time,  as they are a staple fruit (veggie) in any Indian home.

Here is the simple recipe for this juice.. drop in some Ice cubes and have a cool summer!!

1/2  Lemon/Lime
5 to 6 tbsp of demerara Sugar
1 to 2 cups of water

Method:

Chop the Tomatoes
slice and squeeze the juice of 1 Orange
slice and use one-half of a small lemon/Lime juice
Put the tomatoes, juices of lemon/lime and orange and then the sugar in a blender and blend it well using a sieve strain out all the juice from it throw away the residue.
Serve them in nice tall glasses with Ice cubes and garnish it with mint.
Enjoy your summer with this delicious simple drink.

Notes:  You can skip the sugar and drink just like that or add Honey/Agave syrup and make it more healthier.  You can add a dash of salt and pepper to it.  Otherwise, go the other way round and add a dash of salt and pepper.

Melon drink

When the sun hits your head, you need to quench your thirst first ? and for me, I just love drinking plain water.  But, sometimes I don't mind drinking fresh fruit juice.  When we get lots of fresh fruit in the market we can have 5 a day or 10 a day 🙂 make juice or make a salad but just enjoy it. Do you love fruits? Then you are  my  list of best friends ever.  Summer brings out some beautiful flowers, fruits,  and veggies.

Sun was in his full glory, that doesn't mean it reaches 42 - 43C as in India.  When it reaches 25-27C it's unbearable for us here, In my part of the world sun is still playing Hide and seek.  It's been pouring non-stop from past 3 days got tired of seeing rain for so long, I did so much gardening repotted my plants, added new plants, had to dig out weeds and add fresh compost as I have a very clayey soil, it's  hard work.  but love my garden when they are in full bloom.  At least for six months I can enjoy seeing them.

Melon drink

With all the hard work I get some perks as well! three thorns got into fingers, I just ignored the two but the third one was too stubborn, I couldn't sleep the whole night as it became blue and swollen and it was my thumb finger!  so, no gardening the next day but had to go to the  emergency unit to get rid of my splinters, the nurse was smiling and said you come every year just for this.  I had a tetanus injection because I don't know if I had one when I was a kid and my parents can't remember!  Anyways thank God! she removed it and I had trouble cooking and cleaning as it was paining severely.

Am I talking too much pouring away my stories as usual, getting back to this drink, Just before the summer starts in India we have a festival called Rama Navami, it's this time of the year which tells you the summer begins,  In India festivals always are accompanied with loads of savouries and sweets, but this festival is celebrated with just a very few interesting recipes which can be mustered up in few minutes.

Melon drink

Ram Navami means it's just panaka ( a delicious cooling drink) Majjige (Buttermilk /chaas) and Kosambari ( with Moong dal and cucumber).  This is served in all the temples and in homes when you visit on that day!  I could go ahead and say that our ancestors tailored the recipes accordingly to the regions and seasons in which we live in India.  They had a purpose for every recipe and the different oils used in different regions also are apt to that place and their life style.  Back to Ram Navami  as I was telling earlier as it is the time when the summer sets in we get different fruits and vegetables which need to be eaten as it is seasonal and helps you stay strong in the hot summer, you can see loads of Melons ( watermelon/ Honey dew melon/Musk Melon/ Cantaloupe) and loads of cucumber, wood apple, Mangoes and Many more.   Melons and cucumbers as you know has loads of water content in them and helps  you hydrated so, that's why in this festival they serve you with this kind of recipes.  Interesting isn't it?

Yellow Melons are called Kharbooza in Urdu. Both the melons smell gorgeous when you hold it and smell it.  The perfectly riped melons smell awesome.  They really are sweet and taste like honey.

Do you have something like this in your place, it need not have to be a festival but what you would eat most as  your Mother's and Grandmother's made for you to eat during summer time. what are those special fruits and veggies which you find during summer time,  These days you can find everything all through the year which is not what you really need right?

Melon drink

My Mom made these every year during summer but she used to make different types of drinks for us to enjoy the whole of summer, my Mom was a school teacher, it was fun as she used to get holidays as we got!  My Mom is a creative cook and she loved experimenting and it was fun to have her at home as she never got tired of spending more time in the kitchen even with the unbearable heat wave.  This drink brings me loads of memories.

Musk/Honey Dew Melon Drink

Ingredients:
Any Melon of your choice (Musk/Honey-dew)- 1
Jaggery/Gaur - 1/2 Cup
2 to 3 - Cardamom
2 to 3 Cups - water

Method:
Wash and dry, Cut open the Melon and remove the seeds.
Using a melon baller scoop out few melon balls for garnishing when you serve.
With a spoon scoop out all the flesh and mash it well. ( My Mom used to squash it using her hand to a pulp)
In 2 to 3 cups of water or you can use more water adjust to the consistency you like!, there's not an exact measurement for this.
Dissolve the grated jaggery until it dissolves then filter it through a sieve. Usually, they have impurities, as this is a raw product.
Then mix the squash of the melon and chill it in your fridge and serve it.
Oops! Don't forget to add some crushed cardamom powder.
Enjoy!

Notes:
It shouldn't become too squashed like grinding it in a mixie. But if you preferred to do so you can do it if you don't want to use your hand!
There is no exact measurement of water, If the melons are very sweet you don't need a lot of Jaggery.
Jaggery comes in round blocks or square blocks, grate or mash them up and use them as you require depending on the sweetness of the melons. Jaggery/Gaur is a sweetener used in India, it is not a processed sugar and is the raw product of cane and is a better option than sugar.

Lemonade with Indian Spice

Three weeks ago one fine day, yes, I mean it! I know you are wondering fine and English weather not a good combination, but a big YES! just like today :).  It was a  beautiful sunny day for almost a week and I was so thrilled to think that finally the spring is here, my tulips have all blossomed beautifully and my little cherry blossom tree is full of pink flowers and all the perennial shrubs are springing back to life.   I was literally dancing with joy! Ahem.., don't laugh if you are in this part of the world you would too!  I am a fanatic gardener, mean to say I am not an expert but love gardening I try my best to keep all my plants alive (most of the time).

Lemonade

Remember my post when  I told you about the wind which took off with my greenhouse and all the pots in it.   It destroyed few of my plants and pots, my garden was looking like somebody ransacked my garden with a vengence. Every day I used to stand in my conservatory and cry myself in my heart thinking when is all this going to be set right?  Sigh.

All these days I hadn't stepped out to clean up my garden, I hate to go out when it is cold and your hands go freezing. When the sun came up it was like a gold lining on every cloud visible.  My conservatory gets too hot when the sun is bright.  Anyways I was so excited at last I could clean up my garden did a lot of jobs cleaned out the whole garden got rid of all the weeds and made space for the sprouting plants.  Had to bin few pots and sorted out all compose and I have dumped them in a big bin so I can sort it out later, when doing all this I got really thirsty that was when I made this lemonade,  I make this  often because I love it!, If you taste it you would too.

Lemonade with Indian spice

It brings back memories, it's always going back to our memory lane! something to chew on when you are getting old. The good old memories bring joy, happiness, tenderness and all the sparkle in your eyes right? Just like spring.  Amma(mum) used to make this lemonade often made this for us to keep us hydrated.  Summer in India is unbearable we get our school holidays just for the kids to stay at home.  That's when we need lots and lots to drink, my parents never bought any aerated drinks for us it was always homemade and super healthy with  herbs and an Ayurvedic touch to it.  This is one such drink which we used to enjoy.

Turmeric

I don't make this lemonade just during summer, but whenever I feel I need some refreshing drink, As I don't drink any aerated drinks very rarely I take a sip or two of coco-cola or a fanta, I always love to drink fresh fruit juices.  This reminds me of Banglaore my home town, during summer we have all these shops spring up where they sell fresh fruit juices.  So,  when I went out I used to go looking for these kinds of shops where we would get fresh fruit juices. I don't get this  kind of happiness here, it's always bottled juices in our supermarkets!

Lemonade

Coming back to this recipe, it has a touch of Indian panakam (juice) recipe it's so delicious you will love it,  It has also turmeric and ginger which has anti-inflammatory properties, helps you in many ways good for joint pains, osteoporosis, digestion and has many health benefits.

LEMONADE WITH INDIAN SPICES

Serves: 8 to 10

Lemonade with Indian spice

Ingredients:

1 Cup Sugar/1/4 to 1/3 cup of grated Jaggery*
1/2 to 3/4 Cup Lemon/Lime Juice from 10 Lemons/Limes
3'' turmeric stick
2'' Ginger
3 cloves
3 to 4 cardamom pods
3 and 1/2 cups of water

Method:

Using a pestle and mortar or a mixie grind dried turmeric, ginger, cardamom  and cloves. (I used my pestle and mortar and crushed all of them).  In a vessel take 3 cups of water add the crushed spices and add it to the water and allow it to boil for 10 minutes in a low to medium flame.  Then add sugar or Jaggery and boil for another 3 to 4 minutes. Once the sugar dissolves filter everything into another bowl and then allow it cool down completely.

Once it cools down completely add the filtered lemon/lime juice and mix well and store it in an air tight clean bottle and store it in the fridge as it is like a squash you can add water and serve it.

NOTES:

*You can use sugar or Jaggery to make this I have given measurements to my liking you can increase or decrease the sweetness apt to the Lime/Lemons you use.

I have given the shelf life as a month, but I have used it before that.

  • Once it cools down completely add the filtered lemon/lime juice and mix well and store it in an air tight clean bottle and store it in the fridge as it is like a squash you can add water and serve it.

Notes

*You can use sugar or Jaggery to make this I have given measurements to my liking you can increase or decrease the sweetness apt to the Lime/Lemons you use.
I have given the shelf life as a month, but I have used it before that.

It's December first! Already! Wonder how the whole year has just gone by without me noticing it.  Even though it’s the end of the year it’s the season of celebration.  Christmas is around the corner you can see the festivity everywhere.  You can see lights up in Malls, shops, street makes you happy even the cold doesn’t seem to bother people here.  Everybody would be shopping till they drop out.

Strawberry diaquiri punch

Christmas means Red and Christmas means Celebration. Let’s raise a glass to the festivities and happy holidays and also festive for a new year’s eve.   I don’t do cocktails so why not mocktail then! Here’s a toast for happy Christmas.

strawberry Diquiri punch

Ingredients:
1 lb (445grm) Strawberries
2 Limes
2’’ Fresh Ginger
1 small stick of Cinnamon
1/3 cup Sugar*
6 Cups water**

 Method:

In a bowl take 2 cups of water to this add crushed Ginger, Cinnamon stick and  strawberries let it simmer for around 10 minutes.
In the mean time, slice the limes into 2 halves squeeze the juice out of them and keep aside.  Don’t throw away the skin cut them into two more halves each and dunk them in the strawberry syrup once the stove is switched off and close the lid, leave it to marinate for 10 more minutes,
Remove the Cinnamon stick and the skin of the limes.  Take the syrup and blend it in a blender add some water if required to a very smooth consistency.
Using a sieve filter it to this add lime juice from the two limes and the remaining water with crushed ice cubes and some mint leaves, adjust sugar  and serve it chilled or at room temperature.

**Water – I have used plain water you can use sparkling water or soda water for a bubbly touch.

Ingredients

Pom Plus 2

After coming back from holiday I have been so busy with guests and kids going back to university time just flew away without my knowledge.  Missed my garden so much as I was not here and thanks to my dear friends who watered and took care of them all through the summer.  I really miss Britain during summer as it look glorious with its beautiful gardens and scenic beauty everywhere.

Pomegranates

Some Pomegranate seeds which were very sweet and juicy.

And some delicious Figs which went into my Juice.

Tukmaria/Sabja/subja/subza all the names are nothing but Basil Seeds which is usually used in Indian desserts like Falooda etc., and according to  Ayurveda, it is a body coolant.  It is also used in Ayurvedic medicine.  These are called as Kamakasturi in Kannada.  It is said that they are not actual seeds of Holy Basil but sweet basil or Thai Basil plant (Ocimum Basilicum).

When I came back I was surprised to find I could still pluck a bowl full of peppers, chillies, Runner beans, Blueberries, strawberries, few raspberries and quite a lot of tomatoes.  I was really thrilled. Earlier when I went for my usual shopping I found these lovely pomegranates and figs got tempted and bought them as well, using all these I decided to make a drink as we had lovely sunshine still.  I did not know what to call this drink so the funny name.

Pom Plus 2

Pomegranate is rich in antioxidants, my children are not a big fan of them and I want them to eat it almost daily which is like mission impossible that’s when I think of other ways to use them, one such thing was this juice I made.  They were not happy as it was not very sweet as I used less sugar and told them it’s good as it is. Hubby and I liked it as it was.  If something has to be good for your health it shouldn’t be sweet, salty or spicy right?

Well coming back to my drink I wanted to make it this month as this is #breastcancerawareness month paint pink everywhere its #PinkOctober #Pinkyourfood #Saladnation.  Inspired by Deeba I wanted to do something this year for the cause of Breast cancer awareness

Pom Plus 2

Ingredients:

1 Large Pomegranate
2 Figs
15 Strawberries
½ and inch Ginger
1/8th tsp of salt
½ Lemon / Lime
1 tbsp Tukhamaria seeds
3 to 4 cups of water
Sugar as per your liking

Method:
Remove the seeds of pomegranate and peel the skins of Figs and ginger.
Wash strawberries and remove the stalk.
Blend all this in a juicer / blender thoroughly.
Add water as required per your taste if you like it thinner or thinner.
Add sugar when you are blending if you need otherwise just drink it as it is.
Filter the blended juice through a good strainer add a tbsp of Tukhamaria seeds and leave it for some time to soak, chill it and serve it.

Vegan Avocado-Mango Smoothie

Last few days Sun had been scorching hot, temperatures soared up so much I couldn't stand and cook in my kitchen as it becomes too warm there and I feel like running away to find some place cooler.  Any amount of water and juices wouldn't quench your thirst down, I feel like drinking something cold all the time.  I made some ice creams, kulfis, popsicles, juices and smoothies.  This smoothie is my favourite which  I make now and then when I get hold fresh Mangoes fortunately which are in season now otherwise when I crave for it I sometimes use tinned mangoes.  I have been eating lots of mangoes as well :), from markets here, they do not taste like the ones I get back home but, they are quite delicious.  When I think of mangoes I think of my hometown, as this is the  season you get loads of mangoes.  My sister has a Mango tree and she used to bring us boxes of mangoes every year, I have a photo of her Mango tree somewhere I should dig it out to share it with you all.

Vegan Avocado-Mango Smoothie

This smoothie was something I whipped once long back when I ended up with lots of Avocado when compared with these two fruits, Mangoes are more appealing to me, which one do you prefer?  Then off course I love the visual appearance of Avocado rather than eating it when compared with Mango.  I use Avocado in many ways it is such a versatile fruit just like a mango, it can be used either as sweet or savoury version, it adapts to anything very easily.

Avocado is definitely a super food, it is said to have a plethora of health and beauty benefits.  There are loads of research done upholding the facts about Avocados.  They are said to have good fat that is the Oleic acid found in Avocados can reduce LDL Cholesterol and Increase HDL Cholesterol.

Vegan Avocado-Mango Smoothie

They are rich in Vitamin E, it is rich in Omega-9 fats that repair damaged skin by reducing redness and irritation caused by Acne, you can use it as a face mask and use its skin as an exfoliator, Did you know it is said that the oil is good for your hair as well, it helps in regulating hair growth and prevent hair loss,  I use Avocado as a hair mask, apply mashed Avocado on to your hair leave it for sometime and wash it with a good shampoo. It is rich in potassium, Mono- saturated fatty acids, high in fibre, it is useful for people who suffer from the symptoms of Arthritis.

Vegan Avocado-Mango Smoothie

The method you use to peel an avocado might make a difference to your health. Research on avocado shows that the greatest phytonutrient concentrations occur in portions of the food that we do not typically eat, namely, the peel and the seed (or "pit.") The pulp of the avocado is actually much lower in phytonutrients than these other portions of the food. However, while lower in their overall phytonutrient richness, all portions of the pulp are not identical in their phytonutrient concentrations and the areas of the pulp that are closest to the peel are higher in certain phytonutrients than more interior portions of the pulp. For this reason, you don't want to slice into that outermost, dark green portion of the pulp any more than necessary when you are peeling an avocado. Accordingly, the best method is what the California Avocado Commission has called the "nick and peel" method. In this method, you actually end up peeling the avocado with your hands in the same way that you would peel a banana. The first step in the nick-and-peel method is to cut into the avocado lengthwise, producing two long avocado halves that are still connected in the middle by the seed. Next you take hold of both halves and twist them in opposite directions until they naturally separate. At this point, remove the seed and cut each of the halves lengthwise to produce long quartered sections of the avocado. You can use your thumb and index finger to grip the edge of the skin on each quarter and peel it off, just as you would do with a banana skin. The final result is a peeled avocado that contains most of that dark green outermost flesh, which provides you with the best possible phytonutrient richness from the pulp portion of the avocado.

Coming back to the Recipe, This tropical fruit  blended with something incredibly healthy secret Ingredient which your kids wouldn't notice or I can say for fussy eaters who will never know what is in it, it's so yummy, creamy and thick.

VEGAN AVOCADO AND MANGO SMOOTHIE

Vegan Avocado-Mango Smoothie

INGREDIENTS:
1 Cup Pureed Mango Pulp*
3 Ripe Avocadoes
1 Cup Orange Juice
3 to 4 tbsp of fair trade Brown sugar*

METHOD
First of all blend y our Avocadoes which are cut into pieces use some orange juice if it is a bit difficult to blend into a lovely smooth consistency, once Avocadoes are smooth add the Mango puree and the remaining Orange juice and blend hem well with the sugar to a smooth consistency.
Increase adding extra orange juice or water if it becomes too thick.

For a variation:
You can add cream of coconut and some bits of Pineapple  to make it a complete tropical smoothie, you can even add Soya/almond/oats milk to make it more delicious.

* I used 2 mangoes cut them into chunks and blended it into a smooth consistency, you can even use tinned Mango pulp if fresh mangoes are not available.

Hi everybody, I am very very Happy, Guess why, before that, I would like to first apologize to Radhika and Farah for not posting on time for my Blog Hop Wednesdays.  I had written to them a while ago before the BHW that I would be posting a bit late, I was all alone, should I say Home alone for 3 weeks as my kids went off for their Hols, and I really did not know what to cook or bake and thinking about how I could live without them when they are not with me anymore!.

Well, after that  every thing changed I couldn't believe that my Mom at last decided to come and visit us after all these years we had been pestering her to come and of course Dad wouldn't come so no question of asking him, She was not ready to come here all this way, a long flight  and she wasn't going to come alone that was my big problem, she was totally scared,  I have to thank my H who had the Lion share in brain washing my mom in coming alone, Thanks to him, I am really so happy..., at last one of my family is here, Kids are really thrilled and I have asked me to retire from the kitchen as they want their paati ( Nan ) to cook and feed them, as she is the best cook ever according to them and my cooking is OK!!.
Yes my Mum is here Yay!!, everything happened quickly, I had a very busy weekend till today :), I am more relaxed today mum is settled in and we all hope to enjoy her short stay here.  After a long time we have a wonderful sunshine here for a few days, hope it continues.., All my friends, family & neighbours keep telling mum that she has brought sunshine to us from India.
Well, coming back to this recipe, I chilled and served this delicious smoothie, with a bit of twist and made it a bit healthy by adding some toasted nuts and flax seed. Thanks to both Radhika and Farah for an other smoothie, I have a few more I need to post.., I Chose this smoothie because of my Prunes, I had bought loads of prunes, so I am trying to use them in many ways, as my kids don't like to eat them as it is !!, using them in  many ways is the only way I can think of using them.
I don't have to say for fellow foodies the goodness of smoothies.., A wonderful complete delicious drink to start your day...,  keeps you energetic and a healthy one too.. what more do you need....

PRUNE, BANANA AND APPLE SMOOTHIE


INGREDIENTS:
2 Bananas
3 Apples ( medium sized )
12 Californian Prunes
2 tbsp Flax seeds powder
3 tbsp of Toasted Nuts
3 Cups Milk
1/4 Maple syrup
few Ice cubes

I had toasted some nuts on pan, Almonds, Pistachios, Cashewnuts & Walnuts. I added 3tsp of Brown sugar for my kids smoothies as they wanted it a bit more sweeter.

METHOD:
Blend Prunes, Flax seed powder and Apples ( peeled & cored ) until smooth then add peeled & chopped Bananas and blend again, Now add milk blend them well again.
Add Ice cubes and refrigerate for 1/2 an hour and serve them chilled topped with toasted nuts.
