We all love food, don’t we? When I go to the supermarkets I started noticing that we have hundreds of choices when it comes to buying food or ingredients right?  After moving here being a vegetarian I started reading labels which I never did before!  As I wanted to be sure whatever I was buying it.  We also never ever bought ready made food which was not so popular in Indian then.  we use different kinds of oils in India which usually is to that state we come from isn't it interesting?

Kale famed as superfood belongs to the cruciferous family.  This is high in fiber (1 cup has 2.6grms), high in Iron, high in calcium, Fat-free, keeps cholesterol in check and rich in omega 3, Vitamin A, K and C.   Did you know that even though it is good for health? I read somewhere in Google search that it is not good for everybody.  You must also read about how it is best to eat it raw or cooked or steamed!
Let’s make this superfood pesto then…..


Kale and Almond Pesto with Roasted Red Peppers and goodness of Hemp seeds:

INGREDIENTS:
300 grams  Kale*
50 grams of mixed herbs (Basil, Parsley, Oregano)
¼  cup Hemp seeds
1/3 cup Almonds
1 Large Red Pepper
4 Garlic cloves
10 large olives
½ tbsp chili flakes
1 tsp Himalayan pink salt
¼ to ½  cup Olive oil
¼ cup Parmesan cheese (optional)
METHOD:

  1. Take just the leaves of kale, do not use the stem as they will be very chewy, wash well and pat them dry.
  2. Take fresh herbs of your choice I have used Basil, Parsley, Oregano. Wash and clean the herbs pat them dry.
  3. Use a stove top or a grill and roast red pepper and Garlic, peel the skin off and keep it aside.

4. Toasted and cooled Almonds and Hemp seeds for few minutes this just helps in releasing the oil and enhances the flavour.

5. In a food processor combine Almonds, Hemp seeds, olives, garlic, mixed herbs, chilli flakes, roasted red pepper, salt, Kale start processing the machine. With the machine running slowly drizzle olive oil into the processor until the mixture is well blended but still has some texture pausing to scrape down the side so everything is well combined.


6. You can add parmesan if you like a creamier texture or you can completely omit it. I haven’t added it.   Only thing is you need to find out if the Parmesan is a vegetarian as Parmesan contains rennet.
7.  Taste and check if you need more salt and spice.  As some Kale may have a bitter taste.  Adjust accordingly.

Superfood Kale Pesto - Jamie's Italian Buyer's guide

NOTES:
You can use different nuts such as walnut, cashew (my favourite and creamier!), Pine nuts (my daughter’s favourite), you can use Brazil nuts (buttery) and Macadamia nuts they are creamier too wouldn’t think of Pistachios though ????!
You can add more olive oil to thin it down and also helps in preserving pesto.  If you are using it in pasta you can even thin it down with a dash of cooked pasta water too.   Store it in air tight container in the refrigerator covered for up to a week.  I suppose you can also freeze pesto in Ice cube trays. Once frozen transfer them to freezer bags and use them as needed but don’t forget to thaw it.
FOR VEGAN VERSION: Use Nutritional yeast instead of Parmesan cheese or completely omit it.
FOR NUT FREE VERSION:  You seeds of Sunflower, Linseed, Pumpkin seeds, or any other seeds instead of nuts.  But use it in less quantity otherwise it might dominate the taste of pesto.

Burgers - Quinoa and cannelliniQuinoa grain pronounced as (KEEN-WAH) has been called the “Gold of Incas”.  Using them in making a Burger gives an Oomph!! Factor and makes it a healthy option, It is one of the super foods because of its super good qualities.
Quinoa has a nutty taste, I would say it’s an acquired taste.  It is a complete protein rich, high in Iron, magnesium, and fiber. Though am not a big fan of quinoa I started using it when I started learning more about it.
I started making Burgers when my kids loved Mac Donald burgers after we moved to the UK!  Kids need to eat good healthy food and I am always very particular about it. These Burgers were a good idea, I started incorporating a lot of ingredients in them which they wouldn’t know or fancy them. (This all happened when they were little!).


When kids were so accustomed to eating Indian food and that is what you used to take in your lunch box and suddenly moving to a new country changed everything!  They didn’t want to take rice in their lunch box, they were happy with Chapatis! They said it was difficult for them to sit and eat and they wanted something they could just hold in their hand and bite into.  They had other kids staring into their lunch box!  Some of them would not like the strong flavours when they open their lunch box.  They had hundreds of things in their little head to deal with.

That’s when I started making sandwiches for them and slowly I started making my own bread.  I used to bake twice every week with different ingredients and flavours!  Then I started exploring and started making their lunch box more interesting and delicious.  But, even today my kids remember the lunch box they used to carry when they were in India!  They used to have a snack break and it had interesting healthy snacks with dips and mini versions of Indian food with interesting sides.  My daughter who remembers most of the things than the other two says how her class mates would love her lunch box.
I used to teach in schools every year, here in the UK for some ethical assignments where they introduced different countries and their food habits.  Children would enjoy my way of cooking and would wonder and ask me; Do you really cook like this every day?  and I would say yes, I do.   They were surprised!   but, most Indian households do the same, I am not any special. Every day I cook from scratch and I don’t have anything store bought!
Being a vegetarian after coming here I realized people and doctors asking me if I do get enough nutrition!  I really want to scream out tell the world that being a vegetarian is not a sin, I do get enough of everything!  Unbelievably my grandmother lived up to 106 years, she had a fantastic memory power, good eyesight, and good hearing as well.  Because of her fall, she had no strength in her body, otherwise, she was a stubborn little devil.
Read this post about why and how I started using quinoa you would know how I discovered it, and it has become a staple in my pantry now!
Coming back to these burgers, I usually have few beans soaked and drained (sometimes sprouted) and frozen always.  Which really comes in handy for my quick curries dry or gravy based to go with my phulka (Indian flat bread without oil).
I have used Cannellini beans with some kale for more nutritious Burger!

Quinoa and cannellini Bean Burgers

Ingredients

  • 4 tbsp olive oil
  • 1 orange pepper (use any coloured pepper )
  • 3 cloves garlic
  • 1 Onion
  • 2 medium potatoes
  • 1/3 cup Quinoa
  • 2 cups Cannellini Beans cooked
  • 1 cup water
  • 1 tsp Italian herbs
  • 1 cup panko Bread crumbs
  • Fistful Kale leaves
  • 1 tbsp chilli flakes
  • 1 tsp cumin powder
  • 2 tbsp Omega -3 mixed seeds
  • 1/3 cup walnuts ( fistful of walnuts)
  • 2 Bread slices** (check notes)

Paste:

  • 2 to 3 tbsp corn flour
  • 1/3 cup water or as needed

Instructions

  • Wash and Soak Cannellini Beans overnight. Adding a pinch of soda helps in soaking properly and when soaked it also helps in reducing the flatulence beans tend to cause. Next day, wash the beans very well again and cook them to perfection. (use double the quantity of water when cooking I use a pressure cooker. Drain the water from the beans and use only the cooked beans. Do not throw away the water and you can use this to cook Quinoa and also use the water to make a paste.
  • Rinse quinoa three to four times. Drain the water then in a saucepan bring 1 cup of water to boil add quinoa to it then reduce the flame to a simmer. Cover and cook for 10 to 12 minutes until all the water is absorbed, keep an eye you don’t want it burnt. If you feel it has not cooked to perfection add another ¼ cup of water.
  • Cook potatoes. Chop Onions, Garlic, and Ginger. Chop Orange pepper, wash and chop a handful kale. Chop fresh parsley.
  • Toast walnuts, grind them to a powder and then 2 bread slices grind them to a powder.
  • In a wok heat Olive oil, add a tsp of Italian herbs and then some chilli flakes, 3 omega seed mix fry for a minute to this add chopped onion, crushed garlic and ginger, sprinkle of salt to soften it up quickly add Kale and sauté for 2 minutes.
  • Remove it on to a big bowl to this add peeled and mashed potatoes, chopped orange (green) pepper, cooked quinoa, fresh parsley, and Bread crumb mixture.
  • Taste the mixture to adjust the spices. Make 6 to 8 patties depending on the size you want it, shape them like a Burger.
  • Using corn flour and water make a thin paste like consistency. Dip it into the corn flour paste then again roll on to the panko bread crumbs.
  • On a non-stick pan spread a table spoon oil and place 2 to 3 patties depending on the size of the pan cook them on both the sides with another 2 to 3 tbsp of oil to golden brown.
  • Alternatively you can bake in a oven Gas Mark 4 for 20 to 25 minutes, or until they become golden brown colour OR you can use an Air fryer and placing 4 burgers at 180 degrees for 12-14 minutes .
  • Place them between two burger buns. Serve them with your choice of sauce and then some fresh vegetables like cucumber, onions, Tomatoes and some herbs and salad leaves. I served them with some Home made Mustard sauce.,

Notes

Use any other Beans instead of cannellini beans.  Adjust spices as per requirement.
** You can make this gluten free by substituting a gluten-free bread!  As Bread is used here to firm up the burgers.  You can also make it gluten-free by increasing it with cooked Quinoa and potato to firm it up or use eggs around 2.

Ragi (Nachni) / Finger millet Semiya (Noodles) is a healthy South Indian breakfast.  This can be prepared for Lunch or Dinner as well. Ragi is the Kannada name to the red millet from the family of millets is a staple food of Karnataka.

WHAT IS RAGI?

Ragi or Finger Millet (Eleusine Coracana) is an annual plant.  Earliest records of this show it was cultivated in India, particularly in the southern parts of India especially in the regions of Karnataka.  It is a staple diet in Karnataka, It is also called poor man's protein diet.  It was referred to  as 'famine crop' or 'Poor man's crop' as it was always seen as farmers staple food,  making little balls out of the flour which is called as 'Ragi Balls' or  called in Kannada as 'Ragi mudde' (will post the recipe soon) was and still is his diet when he went farming.  This is still used as an important part of our diet in rural parts in Karnataka.  This is very fulfilling and keeps your hunger at bay.

WHY RAGI AS BREAKFAST?

Breakfast is a quintessential part of our daily life, it is the most important meal of the day. You can indulge with tempting, tasty and healthy recipes, and make your breakfast a worthwhile. Ragi is one of the most nutritional and healthy grain.  Breakfast with Ragi is very fulfilling and keeps your hunger at bay.

Even as a kid I used to like it, My children wouldn't eat because of the colour.  Nowadays they have started liking it.  Especially they love it when I make this Semiya (Noodles) dish and it doesn't even taste like Ragi!  that's their verdict.  So, now this is always in my breakfast list.  Children happy so Mummy is happy when they eat healthy food.

RAGI IN VARIOUS DIETS

In my state(Karnataka), we make a special diet for babies using this flour and is called as ' Ragi Siri' (Homemade Baby food)! (will post the recipe).  My children grew up eating Ragi siri!!  These days people have realized the nutritive value of this little grain, even in urban areas, now when I visit India (Karnataka) I have started seeing them in restaurants!!

Benefits of Ragi are said to control Diabetes, Osteoporosis, Cancer, and a lot more. It is said that Ragi is said to be rich in protein which is easily absorbed by the human body.  It is also rich in Calcium, phosphorus, potassium, and Iron.  It is said that Ragi reduces cholesterol. It is also gluten-free.

RAGI AS A MILLET

Among the millets, comparable to foxtail millet and Kodo millet, studies have also shown that finger millet controls blood glucose levels, hyperglycemia, and oxidative stress. Finger millet has also shown promise in accelerating wound healing among diabetics. Diabetic patients are advised to eat Finger Millet for this reason.

That's a lot of things we have come to know of this little grain, let's get to the recipe then, on how to make Ragi Semiya (Noodles).

Ragi Semiya (noodles)


RAGI / FINGER MILLET OTTU SHAVIGE OR SEMIYA (NOODLES / VERMICELLI)
Vegan South Indian Karnataka Style fresh Homemade semiya (Noodles)

Ingredients:
1 Cup Ragi / Finger Millet Flour
1 & 1/2 Cup Water
1 tsp Oil
1 tsp salt

Method:
In a heavy-bottomed vessel add water and a tsp of oil and salt allow it to boil. Once it starts boiling bring it to a low flame. In a cup take 1 to 2 tbsp of water and dissolve a tsp of ragi flour dissolve it and add it to the boiling water, after a minute add the flour into the vessel in the middle and immerse a wooden stick or a spatula or label in it.

Close the lid (it won't close completely) not to worry. Leave it for 7 to 8 minutes, water starts rising to cover the flour. Remove the lid and switch off the stove, stir vigorously to bring all the flour together, sprinkle little more water and close the lid.
After 2 minutes, remove it on to a plate. It will be very hot so dip your hand in water every time, start bringing the dough together into a dough ball. Knead the dough into a smooth ball.
Now your base for the Ragi Semiya (Noodles / Ottu shavige) dough is ready.

Ragi Semiya step-wise

HOW TO MAKE RAGI SEMIYA  (NOODLES) / OTTU SHAVIGE:

Once the dough is ready to use a Shavige maker or Chakkuli maker to make Ottu shavige. Make around 3 balls fill it into the dough maker and press it. Use the Thenzgol press or the Omam Pudi press which has large holes or small holes whichever you choose and make the Shavige.

Press the shavige into Idli plates or some vessel you can use for a steamer. Place it in a cooker and steam just like you make Idlies for 12 to 15 minutes.
Take it out and spread it on a plate so they don't One another.

Ragi semiya step-wise

I have made a powder to use for the Bath, Here is how you make that powder to the Bath

CURRY LEAVES POWDER:
INGREDIENTS:
1 & 1/2 Tbsp Channa Dal
1/2 tbsp Urad Dal
25 curry Leaves
1 tsp Black Pepper
2 flakes of Tamarind
1/2 tsp Oil

METHOD:
In a wok fry with a tsp of oil, all the above said ingredients until a nice aroma comes out and the dals change colour. Once the dals cool down powder it and keep it ready.

HOW TO MAKE RAGI SEMIYA (NOODLES) / OTTU SHAVIGE BATH:

Ragi / Finger millet Semiya

INGREDIENTS:
3 to 4 Tbsp of oil
1 tsp mustard seeds
1 tbsp of channa dal
1/2 tbsp of urad dal
few curry leaves
1/4 fresh coconut
few coriander leaves
Salt as required

METHOD:
In a large wok, heat oil add mustard seeds, once they splutter add the green chilies, dals and curry leaves and fry for few minutes in a medium flame once they change colour.
Add the steamed Ottu shavige and salt as required mix well and carefully so they don't break up, then add the curry leaves powder around 3 to 4 tbsp (use it as per your taste).
Mix everything well close a lid and leave it for 2 to 3 minutes.
After 3 minutes switch of the stove remove the lid sprinkle fresh coconut and chopped fresh coriander leaves thoroughly mix everything together.
Serve warm and enjoy this Ragi Semiya (noodles).

Verdict: My family loves it, according to my children you won't even know that it is made of Ragi.

Kaarad Rotti (Rice flour Indian Flat bread)
Kaard (spicy) Rotti (flatbread)!! In Kannada kaard rotti is nothing but south Indian flat bread which is made with spices.   Rotti is usually made with rice flour but as this rotti is made with chilli powder it is called a spicy rotti.

My neighbour Manu Aunty back home is the most wonderful lady I have ever come across, we get acquainted when I was 15 yrs Old!  I still remember it as if it was yesterday.   Our acquaintance turned into a strong bond.  I used to go with her to all her family functions!, I became one of her family members.  It was all such fun when we were young we used to enjoy so much going around with her to all the family trips and every family functions.  She is basically a Jain and I learnt a lot of cooking from her she was born and brought up from Mysore, but her parents were north Karnataka, you could see the touch of Dharwad, Belgaum, style in her cooking.  I learnt quite a lot of dishes from her and her relatives.  Remember the Maavinhannina Seekarne (Mango Milk Shake) I have posted long back, was one such dish I saw her family serve it with obattu(poli).  She makes obattu in a different way will post her recipe someday soon.

The Best are her Avarekaalu usli in the season with rice flour flat bread is simply awesome,  It will be so tasty.  I can keep writing about her cooking the whole day.  She is such a sweet lady I have never seen her with a sad face ever, she always has this beautiful smile feels like you are home.  She never sends anybody without serving them with some of her home-made delicacies.

Last time when I visited Bangalore, I always visit her as soon as possible, as she lives next door I jump to her house from our balcony!!, that's what I always do and my mum hates it, she thinks someday I might fall from there, but it's a quick way :).  So, when I went and knocked her door, she opened the door for me and we started chatting, we went straight to the kitchen as she was making morning breakfast and this is what she was making!!, I suddenly thought I want to capture it, I told her I will be back in a minute and jumped back into my house took my camera and came running back.  I had no props or anything but enjoyed taking photos of the process of favourite Rotti.., you can see step wise photos, hope you enjoy making and devouring it.

If you are familiar with making Ubbu Rotti/ Rice flour flat bread or Jowar Rotti this is one you can make easily as it is similar to that, You don't need anything special to serve this with as it is spicy already just with yoghurt it tastes really delicious.

Kaarad Rotti (Rice flour Indian Flat bread)

Ingredients:
2 Cups Rice Flour
1/3 to 1/2 Cup Fresh Coconut
1 and 1/2 to 2 tsp Chilli powder
1 tsp Salt or as required
2 to 3 tbsp Finely chopped Coriander
1 Sprig curry leaves finely chopped
3/4 to 1 Cup of very warm water

Method:
In a bowl take Rice flour and all the other Ingredients except water, mix well now start adding water little by little for making a small ball. Don't make a ball with all the flour at once, It's better to make little by little.

You need to add rice flour liberally on to the surface and keep beating it around like you do in Jolada rotti turning it around so that it doesn't stick to the surface.

If you are unable to keep making it to round as big as she has made, it takes time to practice so, you can use rolling pin and make it to a round, don't forget to add rice flour liberally on to the surface now and then otherwise it will get stuck.  I would say start with little round balls and spread it more than your palm size to start with.

She has made a perfect round as you can see. slide it on to a plate and on to the tawa.

Once you have put it on the tawa, sprinkle water on top of it, so it gets wet all round, which helps in cooking.

Keep a wet cloth and press it around lightly this helps in making the rotti  fluff a little bit.

Add some oil on both sides of the rotti, and cook well on both the sides until you see little red spots.

Once it is done serve it with yoghurt which is really perfect for the summer weather.  I enjoyed it with some pickle.  She had more chilli powder so, it was very spicy and yoghurt was a good combo.  I went home and made the same breakfast but used less chilli powder so I served it with yoghurt and chutney powder mixed in it.

I have been quiet busy we had Diwali this week, did you all enjoy and had a safe Diwali.  I haven’t brought you what I made for Diwali but something different for a change, bake this for a thanksgiving celebration or for Christmas or for a birthday or just a weekend treat, well it’s so delicious you don’t need a reason to bake this cake.  My photos don’t make justice to this cake if you love coconut this is for you. I baked this cake a fortnight ago but, as I was prepping up for Diwali I couldn’t post it.

I am a bit of a health freak, I stopped baking regularly once I realised I was making my family eat too much unhealthy stuff, I started looking for things I could change to make it bit healthier say if not 100% at least to some extent, when I decided I started changing flours then how I could cut down on fat and refined sugar.  The thing which I still am unable to compensate is Sugar, my family have come to terms with flours and fat but not with sugar, they are fine with unrefined sugar but I am not allowed to reduce itJ.  So, I can’t do anything about it unfortunately.  When I shop I keep looking for different ingredients I can bake with one such product I had an eye for a long time was Coconut flour, I was always tempted to buy and try it out but somehow I kept postponing.  Probably I was waiting for a good Organic product as this one.

As this was the first time I was using Coconut flour in my baking I had to do some research on how to use it, lots of people said it’s a very highly absorbent flour, some of them said you need to use a tried and tested recipe to get a perfect bake, it all scared me a bit, but as I had already decided to go with it.  I gave it a go, Coconut flour is a unique non-grain fibre rich protein highly absorbent flour.  Coconut flour is made from coconut milk when it is pressed the left over coconut bits that is the solid which is left over is dried over at low temperature and ground to produce a soft fine powder.  So we all know about coconut flour now let’s get baking with it.

Ingredients:
100grms Samai flour(little millet)
75 grms Sorghum flour ( Jowar)
40 grms Organic Coconut flour
145 grms Caster sugar
40 grms Organic Coconut sugar
150 grms Coconut milk
150 grms Pineapple puree
¼ Cup Organic extra virgin Coconut oil
¼  Cup Olive oil
1 ½ tsp Baking powder
½ tsp Baking soda
3 Eggs
3 tbsp Pineapple Juice

For the Chocolate layer (Optional)
20 grms Coco powder
2 tbsp coconut sugar
1 tbsp of Pineapple juice

For the Icing:
1 Cup Icing Sugar sifted
1 tbsp Pineapple juice
¼ cup desiccated coconut

METHOD:
Preheat the oven to 180°C / Gas mark 4, Grease a Bundt cake with any of the gluten free flour about I mixed it with a bit of coconut flour as well.
In a bowl mix all the dry ingredients millet flour, sorghum flour, Baking powder and Baking soda sieve well and keep aside.
In another bowl mix the wet ingredients Coconut sugar, Caster sugar, coconut milk, Pineapple puree, coconut oil and olive oil blend them well together
In a bowl break one egg at a time and beat them well adding both the sugars until fluffy to this add the wet ingredients until smooth.
Completely incorporate the dry ingredients with the help of a spatula.
I made a Chocolate mixture using the ingredients above the chocolate layer heading.
Pour in the cake batter into the prepared Bundt tin in two parts layering the Chocolate mixture.
Bake this for about 55 minutes or until a tooth pick comes out clean when inserted near the tube of the tin.
Let it cool then release the cake around tap gently and unmold it from the pan onto a wire rack.
In a bowl combine the Icing sugar with the pineapple juice until it is thick and runny, pour this over the cooled cake allowing it to drip it down the sides of the cake then sprinkle some desiccated coconut over it to get a more coconut flavour if you prefer otherwise just leave it as it is.

Somethings to note:
Please check your oven as my oven very heated up I bake my cakes in Gas mark 3, I have mentioned above the usual cake baking temperature.  I baked my cake for 55 minutes.
I was just thinking I shouldn’t have used chocolate layer this way next time I would completely make it a chocolate cake or a marble swirl cake.
I have cut a circle in a cardboard using a Bundt pan and a hole in the middle and insert it into the tin, this helps the cake sliding on to the board nicely.
I have given 3 tbsp of pineapple juice don’t wonder why I have not said anything about it, as the batter had become slightly thicker than I wanted it to be I used it to thin it down.
I used Canned Pineapple and the juice from it, if you are going to use fresh pineapple just check if they are sweet otherwise you might end up with a sour cake and your sugar wouldn’t match it.
I have used canned coconut milk as well, buy the best product I did not use the water but the thick cream on top when you open it.
Hope you Enjoy baking this cake, My family and friends told me that it was very moist for a gluten free flour and they could never think it was a gluten free.  If you bake this cake do write to me and tell me how it turned out

 Coconut & Pistachio Macaroons

I love baking cookies; they are no hard work, fuss free, few ingredients and Lo! Bite sized, fulfilling on the go & all time favourite sweet something’s, what do you say? Do you like cookies? What’s your favourite?

This post has been in my draft for some time, I have been away from my blog  for a long time. Days just go by without me knowing it, well I could blame it on my kids now.  They are in University now, excited that they came back,  I have been quite busy past month, been cooking and baking non-stop.

Coconut & Pistachio Macaroons

So, they have been here for a short break for  Christmas vacation and I am so excited about it, from past few months I haven’t baked much at all, After they joined University this year, baking has taken a back seat.  Every week, sometimes twice a week I used to bake breads, they loved home-made breads for their Lunch box and also I used to bake cakes, muffins etc, just for munching / snacking.    I have been thinking about this from past year wondering what I would do when they go away, probably stop baking and stop blogging too.

Well, I don’t think I can stop blogging now as my kids are cooking on their own and always ask me and look at my blog for recipes, I have planned to blog basic & simple recipes just for my kids for their reference.

Coming back to the recipe, I baked these when my kids were here, they were very tasty, and if you want you can increase more sugar if you have a sweet tooth.  They were quite tasty I ate quite a lot as my two favourite Ingredients are in that, Coconut & Pistachio two of my favourite ingredients.

Coconut & Pistachio Macaroons

Recipe Source: Jayasri
Prep time: 10 minutes
Baking time: 20 minutes

INGREDIENTS:

100 grms Pistachio Nuts
100 grms Fresh Coconut
100 grms Caster Sugar
100 grms Icing Sugar
2 tbsp Rice Flour
2 tbsp Corn Flour
1/8 th tsp Baking soda
2 tbsp Oil
Pinch of salt
Few Pistachios for decorating

METHOD:

First of all powder pistachios coarsely, take Fresh coconut and give one  whiz in your food processor or mixie don't do it too much it will start giving milk which we don't want, as we want the taste of coconut , Now mix this with Icing sugar, salt and Baking soda and keep aside. In a bowl beat Rice flour, Corn Flour and oil beat them together, to this add the dry ingredients mix well.

Make small balls, I made around 27 balls out of the dough,  flatten them out and bake them for 20 minutes in a preheated oven Gas mark 3 on a baking sheet (I have a gas oven and gets hot,  even in low temperature so I always bake in a low temperature).

Once done take it out and cool on a wiring rack,
You just can’t stop with one  enjoy it with your Cuppa ya Chai

The famous Neiman Marcus Cookies are made with ground Oats and Choco Chips from the popular email chain that flooded the Internet for years.
At last I have decided I am not going to sleep until I publish this post, which had to be on the 24th, the deadline for the Taste and create started by Min of the Bad girls kitchen I am back with those group of people with whom I enjoy this.., so this month I was paired up with  Bizzy Bakes, as she says - that she is an avid baker, She loves baking, she has a wonderful blog with loads of recipes and Muffin Monday and come bake with Bizzy.., hop on to her blog to find to more.....Coming to this recipe - This recipe is called Neiman Marcus Cookie - I had heard a similar story about the other recipe and this seems to end up just the way. Here is a little story from Wikipedia.
Neiman Marcus - is a luxury speciality retail department store operated by the Neiman Marcus Group in the United States. The company is headquartered in the One Marcus Square building in Downtown DallasTexas,[1] and competes with other department stores such as Saks Fifth AvenueBarneys New YorkLord & TaylorNordstromVon Maur and Bloomingdale's. The "Neiman Marcus $250 Cookie Recipe" story

In revenge, she photocopies the recipe and urges her friends to distribute it for free to everyone they know so that the store will make no further profit on its sale. Well, don't know how true it is, they say that there were too many loopholes in this story.., Whatever it is My kids just loved these cookies and thanks to Bizzy Bakes for these lovely cookies.
I made a few little changes to suit my style of Baking, you got it right, I made it Eggless and changed a bit with flour, as I had no stock of Brown rice flour.
 
GLUTEN FREE AND EGGLESS NEIMAN MARCUS COOKIES
 
INGREDIENTS:
Recipe minimally adapted from Bizzy Bakes
1/2 cup Margarine/Butter (I used Butter)
1/2 cup Soft Brown sugar
1 tsp pure Vanilla extract
1/2 tsp Baking Soda
1/2 tsp Baking Powder
1/4 tsp salt
1 tsp Coffee powder
1/2 Cup Rice flour (white)
1/4 cup Tapioca flour
2 tbsp Potato Starch
150 gms Chocolate chips
METHOD:
Take the Dry ingredients the flours, BP. BS, coffee powder and  Salt, mix well sieve them together for at least three times, this ensures the flour is completely mixed well.
Cream Butter and sugar until light and fluffy then add the dry ingredients to the this and mix well make it into a nice dough add a tbsp of cold water at a time if required.
If using margarine be careful using water as margarine has a lot of moisture content in them.
Refrigerate this dough for at least 1/2 an hour
Mine was not a very soft dough as hers so you could drop them on the sheet, but rather it was a dough wherein I had to make small balls and press a little bit, (not too much ) as they spread while baking.
Take little balls and give a light press to them and place them on a baking sheet on a greaseproof/baking parchment and bake them in 5 minutes pre-heated oven at 375 degree F/ Gas mark 5/ 190-degree Celsius for 8 to 10 minutes.
when you move the cookie if it releases easily that means it is done ( if a slight nudge will push the cookie on the sheet).
My verdict:
I was quite happy I chose this recipe.., My kids and friends loved it, they were a bit chewy but so yummy.., if you have a sweet tooth you will love it.

Hi everybody, Hope you all had a lovely weekend, I had a good one making these gorgeous Nanaimo Bars for the Daring Baker's Challenge !!, The best of this challenge was I made them very early and ready to post!!, and the Graham wafers which I baked on Friday night was over by Saturday Night!!, so, just think how good this one was !!, If anybody has a sweet tooth they would love just like my family !! well, coming back to the recipe and its origin...........
This is the first Daring Baker's Challenge of 2010
Nanaimo Bars are a classic Canadian desert created in none other than Nanaimo, the British columbia pronounced as Nah-Nye-Moh (Nanaimo), so says our Host Lauren of Celiac Teen.
The January 2010 Daring Baker's Challenge was hosted by Lauren of Celiac Teen. Lauren chose Gluten free Graham Wafers and Nanaimo Bars as the challenge for the month. The sources she based her recipe on are 101 cookbooks by Heidi swanson and city of Nanaimo
The Graham Wafer recipe Lauren has adapted it to gluten free, check 101 cookbooks for many more mouthwatering recipes, I love most of her baking and her write up to.
These bars have 3 layers a base containing Graham crackers, cocoa, coconut and nuts, a middle custard layer and a topping chocolate. Here are my Graham crackers and Nanaimo Bars.

GLUTEN FREE GRAHAM WAFERS AND NANAIMO BARS

Ingredients for the Graham Wafers and Nanaimo Bars I will give them here but for a details on how to make them visit here
For Gluten Free Graham Wafers
  • 1 cup (138g) Sweet rice flour (also known as Glutinous rice flour)
  • 3/4 cup (100g) Tapioca Starch/Flour
  • 1/2 cup (65g) Sorghum Flour
  • 1 cup (200g) Dark Brown Sugar, Lightly packed
  • 1 tsp Baking soda
  • 3/4 tsp Kosher salt
  • 7 tbsp (100g) Unsalted Butter
  • 1/3 cup honey, Mild-flavoured such as clover
  • 5 tbsp whole milk
  • 2 tbsp Pure Vanilla extract
NANAIMO BARS
Bottom Layer
  • 1/2 cup (115g) Unsalted Butter
  • 1/4 cup (50g) Granulated Sugar
  • 5 tbsp Unsweetned Cocoa
  • 1 Large Egg, Beaten
  • 1 & 1/4 cups (160g) Gluten Free Graham Wafer Crumbs (see previous recipe)
  • 1/2 cup (55g) Almonds (finely chopped)
  • 1 cup (130g) Coconut (shredded, sweetened or unsweetened)

Middle Layer

  • 1/2 cup (115g) Unsalted Butter
  • 2 tbsp and 2tsps Heavy cream
  • 2 tbsps Vanilla Custard Powder
  • 2 cups (254g) Icing Sugar

Bottom Layer

  • 4 Ounces (115g) -Semi sweet chocolate
  • 2 tbsps (28g) Unsalted Butter
My Verdict: Graham Wafers were so easy to bake they just came out within 20-25 minutes and I think I got around 35 to 40 of them, The two things I changed to the original recipe was I did not use egg as mentioned but I used 1 tablespoon of Flax seed and Goji Berries milled (powdered) to substitute the egg with 3 tbsp of warm water, and the other thing I used was a fist ful of Pistachios grounded with the custard powder gave it a nice taste (as I love Pistachios), I did not make thick Bars but slightly thinner in size!!
Last but not least the Graham Wafers were a big hit with my kids I baked them on Friday night and saturday night it was all gone, I had to hide 2 of them for my husband to taste as it was who gave me a great encouragement in making these, as he took me to the Asian shop and reminded me to buy the flours!! and when he tasted them when he was back home on sunday and said they were really nice and asked for more!!, I had to tell him that it was just gone.

Maddur is a town in Mandya district, as Mandya is famous for sugar, Maddur is famous for its Vada! Vada is a fried snack usually made of lentils and dals but the speciality of this vada is, it is made with Rava! is spicy and tasty with the addition of onions!
Maddur is a town lies in between Mysore-Bangalore highway!  They sell this vada in trains and buses and who travel between these places would definitely know about this.  I have loads of memories associated with this snack! every year like a ritual from our childhood would travel to aunt's place for our summer holidays.  Even after I got married I used to take my kids and go to Mysore!  The love and affection from my Aunt's family have always been so immense and strong, even today I visit them every time when I am in India!  I could simply write loads and loads of memories my life in Mysore.   This is mum's recipe for making Maddur vada, anybody travelling between Mysore-Bangalore route would have definitely noticed that people come selling
This is my mum's recipe for making Maddur vada when the train comes to Maddur, we would pester our mum to buy us these when we were kids! they used to be so crispy and tasty, these days it's not really exciting as the vadas are not hot and crispy as before they are quite cold and I feel they have lost their original taste but, it always makes me feel the nostalgic memories associated with it!   Making this at
As we used to love it so much Mum started making this at home which is much more tastier and healthier, as I know what goes in it and the fresh oil she uses to make these. When it is raining just munch on these spicy crispy vada with a cup of tea in one hand and holding vada on the other hand and stare out of the window and enjoy the rain pouring down the window sill.  Lot of people must have posted this recipe, here is my version of it....
MADDUR VADA

Ingredients:
  • 1 cup Rice flour
  • 1 cup Rava / semolina (fine)
  • 3 tbsp Maida /APS
  • 5 to 6 sprigs of curry leaves
  • 4 tbsp of hot oil
  • 3 to 4 medium-sized onions
  • 6 to 7  green chillies*
  • salt as required
  • water as needed
  • 1/4 tsp Hing / Asafoetida
  • Oil for deep frying
METHOD:
  1. In a Bowl mix rice flour & soji /Rava and then mix it thoroughly with salt
  2.  Add hot oil and then mix again, the end product will be soft and crispy!
  3. Add finely chopped onion and leave it for 10 to 15 minutes.  Onions release water.
  4. Now mix all the other ingredients and add water little by little and make it into a chapati dough consistency, do not exceed the water requirement otherwise the dough when fried in oil will absorb too much oil!
  5. sHeat the oil and keep it on a low to medium flame.  Check that the oil is hot by dropping a little dough into it, if the dough comes up immediately then the oil is in perfect state.
  6. Smear a little oil onto your palm or little oil on a plastic sheet, Take a lime sized ball out of the dough and flatten them on your palm or on the plastic sheet, slide it into the oil and deep-fry until they are golden brown in colour, turning it now and then for equal cooking on both sides.
  7. once done remove it on to a kitchen towel to absorb oil.
  8. Serve hot with a nice cup of tea or coffee or with coconut chutney!

NOTES:
My mum's way of making it is, not using any Maida at all ! My Mum doesn't like to add maida, she feels as using maida gives a stretch to the vada but, as we love it crispy she makes it with just semolina and Rice flour same measurements as above sans Maida! This stays crispy the next day as well if anything is still left!  You can add Red chilli powder and reduce green chillies and also you can add 1 or 2 tbsp of fresh coconut.

I had bought Mandakki puri or Kallepuri, from the Asian stores to make Bhel in that i was left with some of it,  I was just thinking what shall i do with it, As i was going to soak for Dosas I thought let me use this also to make Dosas. Dosas come out soft and fluffy don't spread it too much make it like a set dosa comes out very well.

KALLEPURI (MANDAKKI PURI ) DOSA

Ingredients:

  • easy cook or Kusabalakki or Dosa Rice 1 cup
  • Sona Masoori Rice (any ordinary Rice)  2 cup
  • Puffed Rice / Mandakki puri or Kallepuri 1 cup
  • Thick curds ( Yogurt) 2 cups (slightly sour)
  • 1 tsp fenugreek seeds

METHOD:

  1. Wash and Soak all the Rice with fenugreek together for 6 hours or overnight
  2. Then take the kallepuri put everything in the water wash it once or twice take it out from the water and soak it in curds for 1 or 2 hours just before grinding the Rice.
  3. Once everything is well soaked grind them all together into a nice smooth batter.
  4. Now the Dosa batter is ready actually you can use this batter immediately as the curds would have become sour and helps the batter in fermenting in no time.
  5. You can serve the Dosas with any side dish you wish
